According to New York Magazine’s Spring 2006 Wedding issue, you do not have to tip the wedding-cake delivery man.
At Ron Ben-Israel Cakes, tips are generally not accepted. Most confectioners say that the cake price is contracted and neither bakers not deliverymen expect extra cash. Alexandra Payard of Payard Patisserie agrees: Tipping for cake deliveries is rare and need not be a concern.
