These are our menus for the rehearsal dinner and wedding:

- Rehearsal Dinner Menu -

Salad -
Assorted Baby Greens with Goat Cheese, Pistachios, Endive, Toasted Croutons and Steen’s Cane Syrup Balsamic Vinaigrette Emulsion

Entrees -
Cast Iron Skillet Catfish with Sauce Menuiere, Crawfish Pecan Relish and Brabant Potatoes
or
Grilled, eight ounce Filet Mignon set on Roasted Garlic Mashed Potatoes and Baby Carrots

Dessert -
The groom’s cake served with hot coffee

- Wedding Reception Menu -

Butler Passed -
-grilled portobello & chicken roulades served on baguettes
-duck & tasso spring rolls
-seafood pies

Food stations -
-seafood stuffed mushrooms
-bite-sized fried catfish strips served with tartar and remoulade dipping sauces
-shrimp etouffee served with Louisiana long grain white rice
-crawfish fettuccine
-steamed vegetables

Carving station -
peppercorn encrusted grilled tenderloin served with whole grilled portobello mushrooms and condiments to include champagne mustard, garlic aioli, horseradish cream sauce.
Served on pocket bread rolls.

Coffee Station -
featuring a local favorite

Sounds good, Miss BoP, it’s a good thing no one at your wedding is a vegetarian! As one, I kept going, oooh.. I like stuffed mushrooms- damn! Crab!! :) Sounds perfect for the locale, with all that seafood. What flavor grooms cake is it? Did I miss that?

actually there are veggies coming- well tech. they just don’t eat meat - like me - but eat seafood. we added steamed veggies at the last minute to kinda balance out all that seafood!

groom’s cake was posted :) it’s new york style cheesecake topped with fresh berries and chocolate sauce.

Miss BoP, yum on that groom’s cake!! My dad is a veggie like that, too, and would have been in heaven!
