Daily Contest: Sandwich Recipe

I have a bunch of random stuff I’ve received from vendors or collected from various wedding events I’ve attended, so from today on we’re going to hold a mini contest every day! Each one will be different - some may challenge you to think or be creative, some may have a random winner, and some may be based on how fast you comment (so you have to be reading! ;))

The first thing we’re giving away is this Le Creuset Whistling Teakettle in cobalt blue valued at $60!

Since Miss Snail’s bridal shower last week was held at Alice’s Tea Cup where we ate sandwiches and tea, I thought we’d have everyone submit their favorite sandwich recipe for this contest. Because who doesn’t love a great sandwich? ;)

A great comfort sandwich for me is peanut butter, honey and banana. It’s all squishy and tasty!

Mine is lame, but it’s american, cheddar, and provolone with slices of avocado on buttered grilled sourdough bread. It’s the BEST.

My favorite is Chicken Salad. Diced grilled chicken breast, diced celery, chopped toasted pecans, sliced red grapes and diced apples with mayonnaise. Serve with green leaf lettuce on a honey or grain bread. YUMMY!

my favorite is melon - panchetta panini. i like just two things between two slices of rustic bread and in a panini grill. (or foreman) delicious!

It’s my favorite, but I will have to say that it’s Mama Orange’s creation that most people get grossed out: Marmalade and white American cheese. Yup. I know. It sounds gross :)

I had the greatest sandwich at a little bakery in town last week. As I was eating it, I thought, I want to have this at one of my bridal showers! It was a slice of roasted turkey (not the sandwich meat, but the real stuff), a very thin slice of red apple, and some cranberry sauce on a croissant. Sooo yummy (sweet and sandwichy all in one)! I definitely recommend it!

Picnic Sandwich

1 loaf pugliese (or other crusty italian bread)
1/4 c. kalamata olive paste
1 c. roasted red peppers,
3 oz. dry italian salame, thinly sliced
3 oz. proscuitto, thinly sliced
1 jar marinated artichoke hearts, sliced
3 boneless, skinless chicken breasts, pounded thin and broiled
3 oz. goat cheese
Leaves from 1 bunch fresh basil

Instructions:
Using a knife inserted vertically into the top of the loaf, remove just the top of the loaf (you’re trying to create a “basket” to hold the contents). Remove the interior bread. Layer the ingredients inside the “basket” and replace the top. Wrap the loaf tightly with multiple layers of plastic wrap. Pack the sandwich in the bottom of your picnic basket, placing everything else directly on top. By the time you reach your destination, everything will have melded together. Enjoy!

I haven’t made this sandwich in awhile, but I used to eat it everyday! sourdough (or french) bread with pastrami (or any other meat), alfafa sprouts, mayo, mustard, tomato, red onion, swiss cheese, pepper. a classic deli sandwich but i love it! :)

Mr. Bluebell created a sandwich which is seriously the best thing ever. It involves a bit of cooking though….

Sautee portobello mushrooms (marinated in balsamic vinegar) in butter, then put them on french bread with liberal amounts of goat cheese. Take the buttery balsamic-y stuff in the bottom of your sautee pan and whip in a teeny bit of goat cheese so it emulsifies, add some chives, and drizzle it all over the insides of the bread. SO SO GOOD!!

The mozzarella and tomato focaccia sandwich from (of all places) - Safeway! Italian focaccia, thick slices of fresh mozzarella with sliced tomato, lettuce, sun dried tomato basil spread (this is chunky) and garlic basil spread (with other stuff I’m sure but thats what you can see. So good and really convienient - plus, half is all I can eat so I get two lunches!

My favorite is a grilled barbeque chicken sandwich.

Take chicken tenderloins and marinate them in lite Italian salad dressing. Then, grill them almost all the way through (I usually use my George Forman and it takes about 5 minutes). Then I take a mixture of 1/4 italian salad dressing, 1/4 honey bbq sauce, and 2 tablespoons marmalade. You baste the chicken with this, let it sit for a few minutes and it should be done. (from Kraft’s So Easy BBQ-glazed Chicken)

I place the chicken strips on focaccia bread (they have good cheap focaccia at wal-mart!) with some skim-mozzarella shredded and either the left over glaze or honey mustard and some salad greens (usually baby spinach until the e.Coli scare).

The chicken alone is great. But it’s so goon as tenderloins in a sandwich!

proscuitto, fresh mozarella, basil and tomatos all layered on any toasted bread. add a lil fresh pepper and you got the best sandwich!

my current fave is my version of chicken salad.

ingredients: finely minced boiled chicken, dill, light mayo, sea salt, raisins, grainy mustard and fresh lemon.

Chilled and serve with whole wheat bread.. and warm soup like butternut squash.

if desired, add in capers, red onion, tomato, and sprinkle some basil and oregano.

I would have to say Pesto, carmalized onions, gruyere, and garlic marinated chicken breast.

This would then be grilled or served panini style.

French Onion Roast Beef!

The bread:
Split a hoagie roll in half, spread a bit of butter on it, and toast.

The meat:
I make my own roast beef (see my link and check out: Salt Crust Herb Roast Beef

To assemble:
Pile thinly sliced roast beef onto the roll. Add sauteed onions. Top with a slice of swiss cheese and toast until melted. Serve with au jus and horseradish.

The au jus:
Sautee sliced onions in a little butter until translucent. Remove and use it to top the sandwich. Pour in beef stock into the pot/pan. Add some red wine and simmer for about 10 minutes. Add salt and fresh ground pepper to taste.
