My Friend Paul The Baker

I asked Paul, my long time friend of 15 years to bake and design our wedding cake. He’s been baking for years and I gotta admit, he knows his stuff. When I ask him, “So what’s the difference between fondant and buttercream?” He’ll go on a 20 minute rant and you can just tell he loves the culinary arts, especially baked goods. We’re not talking Duncan Hines in a box baby, we are talking imported raspberry sauce from southern France. Sheesh, I had no idea one had to be so globally oriented to bake a cake. shocked

A couple of years ago he started his own cafe in Las Vegas where he made these delicious cakes and French style pastries. I was so impressed with his baking abilities that I made sure to ask him to reserve a day to not only attend our wedding, but I also asked him to be our wedding cake baker!

He is going to make us two cakes - one for the guests to eat (undecorated) and one for the picture taking/cake cutting (fondant and some more fondant!). The decorated cake will basically be an empty shell except for the top tier which we will save in our fridge for one year (it’s an Asian tradition). He’s already baked a few sample mousse cakes for us to try and again we were very impressed. He really strives to work around our personal preferences with the taste and design.

We wanted a cake that wasn’t heavy or too sweet (sweet as in all you can taste is sugar paste after the first bite). Mr. Apple and I are both chocolate junkies - we love dark chocolate, but we asked for a simple chocolate cake because I don’t think most people like dark chocolate. Paul will be creating a miniature replica of our real cake next month so I’ll make sure to post photos. What cafe in Vegas does your friend own? My parents still live there and I might be getting married there and those cakes look amazing.

I don’t think freezing and eating the cake on 1st yr anniversary is an asian tradition. anyhow, I love the cakes! especially the second chocolate buttercream one!

I like the first one. It’s elegant with a modern touch. Your friend’s cakes look so delicious, makes me want some cake NOW!=D I had a 3-tiered cheesecake with 3 different flavors- lemon mousse, apricot, and caramel praline. Mind-blowing. I love cheesecake!

Valeqt - He started his baking business from scratch about 2 years ago and he was doing well for awhile but I think having a retail bakery business in such a competitive market in Las Vegas is pretty difficult. His bakery was called “Tresor” (there is a meaning behind the name but I forgot) but now he’s back in Dallas doing it as a side job and learning the trade a little more. He told me he just made 50 holiday cakes for one of his clients! So I guess his business is mostly through word of mouth.
I hope he will continue to bake and open up a baking studio soon- i’d love to learn from him!

Sorry Valeqt, he would do it if he was living in Vegas but he’s open to working with anyone in the DFW area.

Oh, another note - i’m a big supporter for young entrepreneurs, it’s so nice to see people who are passionate and driven to succeed in the tough Business world!

yeah, i’m pretty sure that saving the cake top for the 1st anniversary isn’t an ASIAN tradition… but a regular wedding tradition….

We had 4 tier, each with a different flavor: marble swirl (my favorite, and this was the layer we kept for next year), then spice cake, normal white with caramel filling, and chocolate fudge with raspberry filling. We had a dessert reception (groom’s cake was a cookie cake) so we didn’t go overboard on the flavors of our cake. I love having each layer different. It was a surprise our guests didn’t expect!
