About Mrs. Emerald

Due to the bakery’s hectic schedule, we had to book our cake tasting half a month in advance. So when yesterday finally arrived, I was SO unprepared. Usually I am super anal when it comes to vendor meetings, with my mega planning binder in hand and pix galore. But somehow yesterday I showed up completely empty handed! Probably cuz I already knew that since this bakery is contracted through our venue, the cakes that are included in our package price are quite limited. I had seen their binder of included cakes, and so I was rather resigned to just an average cake.

I had spoken to the bakery lady multiple times with questions about what I can/cannot do within my package, and everything I asked for came with the response, “No, that’s an upcharge.” I got this answer multiple times in regards to cupcakes, chocolate ganache instead of buttercream, red velvet cake, mocha mousse…I was frustrated because everything I wanted came with a “NO.” This pissed me off cuz c’mon, at least give me the OPTION of these choices. If I want them badly enough, I’ll PAY for them! But don’t give me that annoying answer every time…Grrr.

So anyways, I was already apprehensive when I went in to meet with this woman. But somehow, it turned out to be the funnest part of planning so far! This is what we got:

Tasting 1

YUM!! I was in absolute heaven. We ruled out the devil’s food cake and the plain old white cake… they were too heavy (and the white cake was so dry!!). Luckily, both chiffon cake flavors were light and not too sweet - much like the cakes you find in Asian bakeries. We came up with three different combinations that we looove:

1) Chocolate chiffon cake/hazelnut filling/chocolate mousse (2 tiers)

2) Yellow chiffon cake/cream cheese frosting/rasberry mousse (2 tiers)

3) Yellow chiffon cake/vanilla custard/lemon mousse

I really, really wanted a chocolate ganache cake, but apparently it would tack on an additional $2 per person which we didn’t feel was worth it. This is my dream cake:

But we’ll be getting something along the lines of this cake below. A 5-tier square cake in buttercream (the pic below is done in fondant). The flowers will cascade down the side in a similar fashion:

However, instead of what’s pictured above, our flowers will actually be dainty, dark pink cherry blossoms made of chocolate (like these below), cascading down the side. I didn’t like the way that this cake below looks like it is infested with flowers, hehe.

We aren’t using cherry blossoms anywhere else in our wedding, but oh well, I like the way they look!

Another thing off my checklist. So, YAY! I am a happy camper!!

that’s so funny! I love the way the “infested” cake looks - its in my photos of cake options!

I do see what you mean though…

Something you could do is talk to other bakers in your area that you would have liked to have used their services. Go and have free cake tastings with them, and maybe consider either ordering a cake for the rehearsal dinner or for one of your showers. Then you still get the experience of cake shopping (with all the free cake/filling/icing you can eat!) and if you find one you like you could still get a mini version of your chocolate ganache cake. FH and I visited a bakery and we love everything about them but are going to shop around so we can get more free cake! (Plus you never know if we’ll find a baker that will match/beat pricing for us or offer us something better!) Just a thought :)

i decorate cakes as a hobby - if you still want the chocolate brown color without extra charge, you could ask her to color the fondant brown, or maybe use modeling chocolate instead (it works just like fondant and comes in a dark brown).

Looks like Rolf’s! They are making our cake as well and while we were initially frustrated by the limited options we found a delicious solution without any additional charges. So good!
