Where Is Miss Tomato?

Getting ready (and slightly freaking) for her wedding this weekend! I can’t believe I’m already in the middle of the last week as a “Miss”! Sorry I’ve been MIA…

This past Sunday some of my church friends threw a bridal shower for me. Here are some pics…enjoy!

Everyone RAVED about the bruschetta and begged for the recipe…so if you enjoy bruschetta, you should try this one!

JOELAN’S BEST BRUSCHETTA

3 tablespoons chopped garlic

2 tablespoons olive oil

4 to 5 vine ripe tomatoes

1 bunch fresh basil

1/2 c. olive oil

1/4 c. balsamic vinegar

1/4 to 1/2 c. shredded Parmesan cheese

fresh ground pepper

olive oil

baguette or crostini

Sautee garlic in the 2 tablespoons olive oil for about 2 miniutes on medium heat. Place in 2 quart serving bowl to cool. Dice tomatoes and add to bowl.

Remove leaves only from basil stems and place in to small food processor with a little olive oil and process until finely chopped and add to bowl. Add olive oil, balsamic vinegar, shredded Parmesan and ground pepper to taste.

Slice the baguette on a diagonal about 1/2 inch thick slices. Coat one side of each slice with olive oil using a pastry brush. Place on a cooking sheet, olive oil side down. You will want to toast them in the top rack in your oven, so you may need to do these in batches depending on the size of your oven. Once the oven has reached 450°F, place a tray of bread slices in the oven on the top rack. Toast for 5-6 minutes, until the bread just begins to turn golden brown (alternatively you can broil the baguette slices for a couple minutes until golden brown).
