After my post about our cookie favors, a few readers asked for Mr. Radish’s recipe - so here it is.

This is a vegan recipe, but trust me, no one would ever notice…they taste delicious! And I know that the raisin can be a very divisive food - you either love ‘em or hate ‘em, so if you fall on the raisin-hating side just leave them out. It shouldn’t affect the recipe at all.

Oatmeal Raisin Chocolate Chip Cookies

3/4 cup soy margarine
1/4 cup of maple syrup
3/4 cup of raw sugar
2 teaspoons of vanilla
1 1/2 cups of unbleached flour
1/2 teaspoon of salt
1/2 teaspoon of cinnamon
1 teaspoon of baking soda
1 and 1/2 cups of quick cooking oats
1/2 cup of raisins
1/4 cup of chopped raw almonds
1/2 cup of chocolate chips

Preheat the oven to 350 degrees. Mix the margarine, maple syrup, sugar, and vanilla. Mix the flour, salt, cinnamon, baking soda, and oats together well. Fold in the raisins, buts, and chocolate chips. Oil a cookie sheet or line with parchment paper. Form the dough into cookies, and place on the cookie sheet. Bake for 13 to 15 minutes.

Oh! I just made vegan oatmeal chocolate chip cookies the other day! In my opinion, vegan cookies and cakes are the BEST! They are SO GOOD! Too bad I’m not a guest at your wedding. I can barely eat anything at most of the weddings I go to - especially dessert. :(

This looks delish. Can’t wait to try it especially since the hubby and I are eating a lot less meat these days. We’re slowly trying to give up meat but so far more me than him hehe.

Those look delish! Just a note from a fellow baker, raisins add moisture to cookies, so the cookies may taste fine without them, but they may not stay as fresh tasting for as long.

i’m a raisin hater, but i love my friend’s recipe for oatmeal white chocolate craisin walnut cookies.

those look so yummy! one question - does the soy margarine have any trans fat in it?

I know you can get Earth Balance soy margarine that has no trans fats in it.

I’ve never made cookies with it, but it’s really good and healthier than normal margarine.

I think Mr. Radish did actually use Earth Balance margarine. That’s usually what we have in the house. You can get if from Trader Joes or Whole Foods.

Did you ever think of putting nuts in there? Like almonds or walnuts? You could maybe do a bunch of different variations of those cookies for your guests? What about putting peanut butter in some of them? PB and Chocolate are always super tasty!
