Flavor Focus Group 1

My ultimate goal for my wedding cake is to have three different flavors for the three layers of cake, but gosh durnit, I plan to LOVE each and every one. In an effort to achieve this, yesterday kicked off the first in a series of cake flavor tests!!

Because I would not, by any means, consider myself to be a baker, I decided that the best plan of attack would be to supplement boxed cake mixes with other ingredients. This resulted in the following three “recipes” (pay attention because they’re difficult):

1. Apple Cider Spice Cake

I mean it - are you paying attention? This is a toughy. To make this cake, you’ll need to start with a box of spice cake.. THEN follow the recipe on the back of the cake box. HOWEVER, rather than adding 1 1/3 cups of water, you’ll instead add 1 1/3 cups of apple cider (see? soooo not easy). This idea came to me upon sampling Vermont’s finest cider donuts, annnnnnnd I happen to love it. :)

2. White Chocolate Raspberry Cake

To make this cake, start with the regular french vanilla cake mix, following the directions on the back of the box. You’ll then want to add the following concoction:

To make this fiery bowl of goo, you’ll want to microwave 1.5 cups each of frozen raspberries and white chocolate chips for about 1-2 minutes. Once hot, smash up the raspberries and stir so that the chocolate chips melt completely.

3. Cinnamon Fudge Cake

Start with the dark chocolate fudge cake mix and follow the directions on the back. Add 1/2 tbsp cinnamon. DONE!

Once the cakes were made, Mr. Bubblegum and I tried each and decided which we liked. I then created a platter of cakes for each of us to bring to work:

The top left is the white chocolate raspberry, the right is the apple cider spice, and the bottom is (as if you couldn’t tell) the cinnamon chocolate.

People were voting on these ALL day, and to tell you the truth, different people just really loved different kinds (who knew?)! I had some people that were adamant that the white chocolate raspberry was the best while others literally told me that they hated it (hey, it’s a taste test, but I have feelings). Overall, the experience was great, because I learned that: 1) the white chocolate/raspberry cake was extremely dense and moist because of the added goo 2) I just really don’t care for chocolate cake.. probably mostly because I have trouble making a moist one 3) cinnamon does not stand a chance to be tasted against dark chocolate 4) apple cider creates cakey miracles.

Apple cider spice cake sounds absolutely delicious!

That would make a great Thanksgiving dessert. And I just so happen to be the person in charge of dessert this year. Thanks for the great idea Miss Bubblegum! ;)

this is like semi-homemade with sandra lee but better! i think i may like the white chocolate raspberry with the apple cider spice a close second. while i love chocolate with reckless abandon, i’m not sure i’d care too much for the cinnamon addition.

i may have to try these myself ;-)

I’m a sucker for anything chocolate…the darker the better! YUM!

Although that apple cider spice cake just might make my Thanksgiving Dinner menu. It sounds delish!

Well I’m biased because it’s the flavour that I have been dreaming about for my own wedding cake, but I am pretty sure I’d be voting for the white chocolate raspberry cake! Though the apple cider spice cake sounds very yum also. Cinnamon-chocolate doesn’t appeal to me as much as the other two.

Yum! I am going to try my hand at the apple spice cake and the white chocolate raspberry! The both sound great. The cinnamon sounds interesting…but I’m not that big a fan of cinnamon. Thanks for the great recipes!

Hey Miss Bubblegum, My secret to a moist devil’s food cake is adding a small package of dry chocolate pudding mix to the dry ingredients (aw, who am I kidding? cake mix) before baking.
But I think I would def. agree with your co-workers on this one. The apple cider spice cake sounds incredible!

Miss Bubblegum, you’re such an adventurous baker! I can’t do anything more experimental than mixing various colors with white frosting… I think I’d like the white chocolate raspberry one the best, but they all sound delish!

I like white chocolate/raspberries, but I would probably leave that for the filling instead of blending it into the batter. Maybe try grating a little lemon zest into french vanilla cake instead?

I would probably like the apple cider one the best. I really don’t like chocolate and I’m not too big on rasberries. However I do like white chocolate cakes =)
Btw, I just wanted to say that I think that was very innovative of you to do a cake taste test.

By the way you describe the white chocolate raspberry, I think that would be my favorite! (although the color’s a little funky looking) I LOVE moist cake (and white chocolate)!

They all sounded really good…I’m looking forward to the other flavors on the docket….

I made my own wedding cakes and I used cake mixes and extra flavors too. Mine were Orange Dark Chocolate and Raspberry Vanilla, they turned out so much better than I expected.

That white chocolate raspberry sounds yummy. It reminds me of the white chocolate truffle raspberry cheesecake at the cheesecake factory. I’m definitely going to have to try that!

We had pumpkin apple spice at our wedding and everyone LOVED it. We gave out Chinese Take out Containers and the whole thing was gone in minutes…and lots of boxes were seen around the next day in various fridges…

And if you need more of them, there’s a cookbook called The Cake Mix Doctor that has recipes for all different kinds of cakes made with mixes.

I’m a HUGE fan of cinnamon and dark chocolate- if you use a better quality cinnamon it will intensify the flavor- helping it to stand up with the dark chocolate. (costco has a great and cheap Saigon Cinnamon)

Also to help the cinnamon flavor pop on the cake without being too cinnamon-ey, mix a little in the frosting. You can make a super easy one from scratch with butter,cream cheese, cinnamon, vanilla and powdered sugar. Oh Now I want one!

You are so brave! I love to bake, but wouldn’t have even thought about baking my own wedding cake - major props to you! I love chocolate and raspberries, but I have to say that the spice cake looks yummy.

If you’re looking for more flavors, check out http://www.cakemixdoctor.com. I have two of her cookbooks, and the cakes I’ve made from it are soooo good. She does what you’re doing — adding ingredients to jazz up regular box mixes — but she’s done all the testing/perfecting for us!

I just made a chocolate butter cream cake from a box and it was super moist. Even people who don’t usually like chocolate cake because of the same reason you mentioned loved it.

Also did you consider passing the white chocolate raspberry goo though a sieve to make it nice and smooth and get the seeds out?
