About Mrs. Pineapple

Believe it or not, we had a rehearsal dinner for our quickie wedding. Well, at least that is what we are calling it. On Friday night my parents, Mr. Pineapple, myself, and the dogs, Oliver and Rooney, roasted hot dogs and marshmallows down at the pond where we live.

Our house is the white one you can see off in the distance. We live on a 100-acre farm, which is very relaxing during crazy times like these.

Rooney spent the RD eating sticks and choking on acorns.

As you can see it was COLD. Here I am rocking about five layers including a massive CMU sweatshirt. I am one beautiful bride.

Here is Mr. Pineapple making our gourmet hot dogs.

Earlier in the day, Mom Pineapple and I baked the wedding cake. When I was a very little girl, I used to watch my mom’s cake decorating videos over and over. I was most amazed by the frosting roses that were made so effortlessly. My dad also tells stories of his mom’s amazing wedding cakes. So, when I had to opportunity to test my own skills, I jumped at the chance. I was really hoping I would be the next Bob Ross of cake decorating. Turns out, not so much. I think I need more practice; our cake looks like it has spiky hair. :)

Luckily it tasted better than it looked!

Have you ever tried your hand at cake decorating? Any tips for me (like how to avoid all those peaks on top of my dollops)?

Your cake looks too cute!
My sources in the world of professional baking say that to get rid of the spiky tips, you have to go back in and smooth them down. You can use the edge of a plastic knife dipped in warm water to do this (so the frosting doesn’t stick to the knife).

To avoid the spiky tips, once you squeeze the dot you make a slight circular movement with the tip!

Is Rooney a yorkie-maltese mix? We had a lovely doggie that looked like Rooney — I miss her so much and that photo looks like what she’d look like now….

Oh, this looks like fun!

As I read about your “wedding in a week,” I can’t help but think that it’s so much like what my husband and I had wanted. But of course, there are so many external reasons (loving family and friends) that moved us into a larger, more formal wedding. I hope this doesn’t offend you, since I don’t know if your first wedding is the result of choice or sad of circumstances, but in a way you are fortunate to have the opportunity to have it both ways: an intimate, “organic/spontaneous” (for lack of a better word wedding; and a larger, fancier wedding.

That’s a pretty great first try! My aunt makes fabulous fancy cakes. She even made my sister’s wedding cake! But I’m having cupcakes that my mother and I are making together.

Your cake looks awesome! You can smooth it down once the icing dries a little bit (if it’s a buttercream icing). I use my finger with a decorating glove on it, so the frosting doesn’t transfer to my finger and stays on the cake!

My mom used to tap down the points like so: tap finger in water, tap finger in sugar, tap frosting point. You can push a little more and make it look like a button.

@jgsg: you’re half right and @Kenzie: you’re half right :) He is half schnauzer, quarter yorkie and quarter poodle. We call him a schmutt

@Erin: it was a hard decision to make, but once we were doing it, i decided to try and do it 110%, now I agree with you and think we are lucky to be able to be married twice :)

This isnt at all what the books say, but I did this once, and instead of squeezing the frosting bag “firmly,” I did it ever so slightly and sort of let up easy on the tip when i was done with that particular “dot.” This is probably no help since im bad at explaining. Oy. But your cake looks great and i want to eat some right now!

Also, make sure you stop squeezing the bag before you pull up!

I made my niece’s wedding cake - we had a blast doing it. To eliminate the “spikey hair” look, stop squeezing the bag before lifting it away from the cake. And if all else fails, you can pat them down a bit - just wait til the icing doesn’t look tacky anymore and put a little cornstarch on your fingertip (so the icing doesn’t stick to your finger)
