Marriage License, Morons, and Macarons

We were really excited to check “marriage license” off our to-do list today! During lunch, we went to the Arlington county courthouse to get it. They don’t allow photographs in the building, so we took this outside—all the better for the world to watch our cheese happening. (Mr. P was such a good sport!) Goobers!

Then we went to the bank to combine our accounts—another milestone!

Going to the bank (which we haven’t done in many years) is like going to the post office, or the DMV. It’s tedious and slow! So we made the best of it by taking some “documentary” photos. Here, Mr. P decides a wink is necessary. (He’s going to kill me for posting this!)

We were happy and felt like we got a lot of important things done!!!! BUT, when we got home and looked closely at the marriage license information, it read that it was good for sixty days. Then the two morons (that’s us) counted the days ’til the wedding: over sixty days away. IDIOTS!!! So we’ll have to either go back or get an extension or something. Surely others have made the same mistake!

However, one bit of very nice news came in the way of a surprise gift (with a thank you card) from Lindsey Ryan, our invitation designer: a box of macarons!! They were delivered (still chilled) today! So nice!!! I should be thanking her!

And it was fortuitous, because I was planning on doing another trial run (my third one in about a week and a half) of the macarons.

I had left out some egg whites to age… and the results: THIRD TIME’S THE CHARM!!! Success!! (More on those later.) Here they are:

I just practiced the cookie part and added some red food coloring. Instead of a real stuffing/center, I just put blackberry jam between the two cookies. Here they are compared to one of the Payard macarons Lindsey gifted. What do you think?

So funny they wouldn’t have made sure you knew how long the license was valid when you applied for it… even to ask if you have a wedding date yet! D’oh! Hopefully it was easy enough that you can correct it. Mine will only be valid for 30 days so still have to wait to go get it …

Yes, I want your recipe too! I went to Tokyo a few weeks ago and fell in LOVE with Macarons there…seriously they have fantastic French bakeries in Japan.

I looked up the requirements online and saw that the license is only good for 30 days (Colorado!). So we’re going for the license 2 days before the wedding (yikes!) because we won’t be in Colorado until the actual wedding week!! {{nerves}}
And is it macaron or macaroon?

Bravo on the macarons!! You should indulge us with your trials, errors (and obviously these successes!), and tips!
I’m wondering, though - what did you do with all of the jaunes? The egg yolks?
If you’ve got them locked away in the fridge, you should make some ice cream!! :)

Your macarons look so lovely! Just as a suggestion, if you haven’t used the Italian meringue method to make macarons yet, I would definitely 110% suggest trying it out. It sounds more complicated in theory, but it’s not really any more difficult than the regular meringue method in the long run and it is so SO consistent and reliable. Seriously, every batch of macarons that I make using Italian meringue has cute little meringue “feet” whereas my experience with the “easier method” has been less than stellar. The Italian meringue method has held up even with using Trader Joe’s almond meal instead of fresh almonds and forgetting to leave out my egg whites and just microwaving them instead.

Of course, you could have already tried the Italian method and this suggestion is pointless. :)

@Jennifer: No, I haven’t tried the italian way. I don’t have a candy thermometer! I might have to try it. There’s a blog called “The Cooking of Joy” and the author made macarons perfectly her first time out using the Italian method! Might have to try it out. Thanks for the suggestion!

@MightySapphire: It’s macarons, although some might call them French Macaroons (to differentiate them from coconut macaroons).

I got my marriage license yesterday. Although it would have been A LOT easier to run over to the Arlington County Courthouse We live in Arlington), we’re getting married in Ocean City, MD and therefore we had to get our license there). Our marriage license is good for six months, thankfully … but the wedding is only 38 days away now. Whee!

So … in Virginia you can get the marriage license anywhere in the state, not just in the jurisduction where the wedding is to take place? That’s nice.

That sucks about the wedding license thing. For us it’s 90 days out and we’ve yet to tackle that task.

And those macarons look AMAZING. Can you mail me a few for a taste test?? Ha ha.

omg! I have been wanting to try to make macaroons, but have always been afraid. I haven’t found an “easy” recipe so far…

I thought of buying macaroons as wedding favors but they end up being too expensive, and too fragile :(

when you go in to apply for your license, how long do you think it took and what all did they ask for? what type of system do they use, computer or is it just a paper process? just wondering b/c i was going to actually write an article on this subject alone. goofy i know.

@wannaknow: It took about 15 minutes total. We completed a form at a computer terminal. Immediately, a clerk verified the information with us, and we gave her our drivers licenses for proof of identity. Then we did a little oath. She then told us to have our officient complete the remaining information, including date and location of marriage and to mail it back to the courthouse (she should have also reminded us that the license was only good for 60 days!).
