I haven’t done a Flab to Fab post in a month. Yikes.

I didn’t fall off the wagon completely, but I have had a bit of a bender. I’ll save you the excuses. Suffice it to say, it’s been a while. But all is not lost - I’m reinvigorated. Now that the pre-wedding festivities are on a a 45-day hiatus, it’s time to grab those handlebars and go for the giggity gold. Slim, straight and strong - here I come!

THE (new, improved) PLAN:

Workin’ on my fitness:

  • Workouts with Tiger, my personal trainer, 3x/week
  • Shredding it with Jilian 3x/week
  • 1 day of rest. And by ’rest’, I mean taking a healthy walk with Paco

Eat yo’ salad, no dessert:

  • Go back to 6 mini-meals a day
  • Exclude refined carbs as much as possible
  • Make protein the focus of each meal
  • Take daily prenatal vitamins and EFA supplements
  • Limit Diet Coke to 2 per day, maximum
  • Drink water like it’s Diet Coke
  • Get my fiber on

I got some new reward stickers for my calendar, and have hung a few motivational notes around my house. I even resurrected an old favorite as a personal Flab to Fab Redux theme song. (Go ahead, try not to be motivated to move by that jam!)

To kick things back off, a brand new recipe!

Flab to Fab Frittata:

  • 6 egg whites
  • 2 whole eggs
  • Olive oil spray
  • 1 medium onion, diced
  • 3 cups fresh spinach (or 1 cup frozen, drained spinach)
  • 1 can diced tomatoes, drained
  • 1 carton crimini mushrooms, sliced
  • 3 triangles Laughing Cow Light Cheese, diced
  • 2 tbsp fresh or frozen herb such as basil, rosemary, chive (optional)
  • Salt and pepper to taste
  • Red pepper (optional)

Preheat broiler. Beat eggs together with salt, pepper and herbs. Set aside. Coat a large, oven-safe skillet with spray oil, and heat over a medium flame. Saute onions and mushrooms until just starting to caramelize, then add spinach and tomatoes. Season to taste. Add egg mixture and half of the diced cheese, and gently stir with a rubber spatula until the bottom begins to set. Reduce heat to medium-low and continue to cook until the top of the eggs is the last to set. Sprinkle the top with the remaining diced cheese and place under broiler for 3-4 minutes, until eggs are set - but watch carefully so it doesn’t burn. Run a spatula around the base to release the frittata, and slice into wedges. Serve with salad, and have fruit for dessert. Yum!

This recipe is another of my “clean out the fridge” meals - meaning, you can use pretty much whatever you have on hand. Got some ham? Toss it in! Leftover chicken, broccoli, beans or even pasta? Toss that in too! Its a great, cheap, utterly flexible meal, and works wonderfully when entertaining. After all, who doesn’t love breakfast for dinner?

Are you on kanye’s workout plan?

Or are you getting fergalicious? I had to take stabs in the dark because the federal governmnet doesn’t let me listen to music/play videos at work {or probably read wedding blogs but you know….}

Go you! I am thinking of getting the shred it dvd. It so popular around here! I just gave up diet soda because I read it makes you fat. I miss it! But the science makes sense. Now when I need one I do the regular soda 100 calorie can.

Hahhaa! You’re funny. Mr. G would love you for referencing Kanye’s College Dropout album! I haven’t exercised in over 2 weeks, and I ate McDonald’s last night. I’ve fallen off a bit, too. Let’s pick ourselves up!

You can also try putting your frittata mix into muffin pans, 375 for 30-35 min. I used the silicone ones and they slide right out. Makes a great grab-n-go breakfast!

Sounds like a great plan. One change I would make is to try and cut out those diet cokes entirely….. cutting refined carbs and increasing protein will definitly help.

I live a 1 treat per day, high protein, low refined carbs, high fruit and veggie, low fat, 5-days of exercise a week lifestyle and have been able to keep a lean BMI of 18 and lots of muscle tone. It’s completly worth the effort :)

@heather12457: I *LOVE* that idea!! Grab and go eggs!! I’ve been trying to incorporate eggs more but it’s hard because they’re not as portable as muffins! You’re so smart…
@Miss.MB: I’ve totally fallen off the wagon, then this past week I grabbed the chocks and started PULLING the wagon! LOL I managed to lose 3lbs this week, I think my body was like “Oh yeah, this is nice. Where did this go for the last month??” LOL!

I have Workout Plan on my workout mix 3 times. That’s right, make it work, eat yo’ salad, no desert.
