A Texas Menu

May 21st, 2009 @ 5:41 pm by Mrs. Beagle

A majority of the weddings Mr. Beagle & I have attended throughout our lives have included a few primary elements, one of them being this: BBQ.

A Texas Menu : wedding food menus Salt Li

Actually, a wedding is not the only excuse to serve BBQ. We love “fixin’ it” for pretty much any occasion that involves a large group of people (Graduation? Birthday? Tailgate? Yes, yes, and yes). We love this food staple. (Salt Lick, anyone?) So, choosing to serve this option at our wedding was easy-peasy.

Sure, we would love to eat prime rib or pecan-crusted salmon on our wedding day, but 1) the majority of our guests will not be expecting that to be served, and 2) honestly, they would probably enjoy it just as much as BBQ (despite the steep difference in price). So far, we’ve organized a tentative buffet dinner menu with our caterer (Laura w/ Classic Catering & Events):

Fresh BLT salad, pinto beans, red potatoes, brisket, sausage, and an assortment of breads.

This menu varies slightly from most BBQ meals I’ve seen (we’ve nixed the cole slaw and potato salad, mainly because we’re not big fana of either, and not everyone likes them :)). Since it’s buffet-style, we are also going with clear plastic dinnerware (gasp!). Yes, I know, but renting dishes would have been an extra ~$4.00/person (~$800+) and frankly, for that amount of money, I’m not that concerned about how it will look while people are eating. On a positive note, we will be using “real” silverware, because BBQ + plastic knives & forks = breakage.

Does your dinner menu reflect your culture in any way? Anyone else using plastic china?

We did for my wedding and will for my sister’s wedding. It looks fine, it’s cheap and you toss it in the end. Easy.

That sounds so different, I’ve never even heard of BLT salad. When you said BBQ, I guess I imagined more of a pig roast type thing. Do you have many out of town guests? I think it would be rally fun to go to a wedding in Texas now!

I hope Mr. Peep doesn’t read this post- otherwise, he may just show up as an unexpected guest at your wedding!!! When we visit his family in Houston the first stop of the trip is always BBQ!!
Now I am even hungry!

oh and to answer your questions, we are planning on serving clam chowder as a starter at our wedding. It’s not cultural but it is local and delicious.

Just a question, do you have any vegetarians coming? Might want to have some vegetarian options just in case.

We served BBQ buffet style and our guests LOVED it! There were brisket sliders for appetizers, grilled asparagus, tri-tip, ribs, corn muffins, and lots more. We did use “plastic” utensils and it was fine - we actually used biodegradable corn product utensils and also encouraged people to eat with their hands :)

Salt Lick is the best! We thought about serving BBQ at our reception as well, but went with fajitas and yummy tex mex instead. Sadly my hispanic side of the family is not real big on BBQ, we figured fajitas would be the best and yummiest way to go.

i am also using clear platic plates (look like glass) and these for silverware http://www.mycutlerystore.com/disposablesilverplasticcutlery.html

My thought is right on cue with yours Ms Beagle- people will remember what you fed them, not what you served it to them on. And financially, its a smart move.

I totally recognized that plate from Salt Lick–I was there last night! We’re going to have our rehearsal dinner catered by Salt Lick. Mmmmmm.

@Miss Peep Toe: I was hoping Mr Frenchi didn’t read this post. I nixed BBQ b/c I’m clutzy and it didn’t mix well w/ the white dress.

Beagle, sounds SO GOOD!

Mmmmm…Amen!

We’re also doing BBQ at our wedding. It is most definitely the staple in my community…Home of the Best BBQ in Texas according to Texas Monthly!! Some family friends are BBQing for us (to the tune of 400 people) and we’re definitely serving the meal buffet style on black plates (with the separaters…a must with beans & BBQ sauce) and using plasticware. Our guests won’t be cutting the meat, so I’m not too worried about breakage (the guys out back will cut the meat into bite-size pieces)!

For our Rehearsal, we’re doing Tex-Mex so that my Michigander Fiancee’s family will get all the great Texas fare!

@slicey19: Most of our family are out of town, but they all live within Texas… so they are familiar with the bbq meal.
@kathy: As of now, we don’t have any vegan/vegetarian guests invited. However, we do have a few guests that have Celiac disease and our caterer will be accommodating them (so I’m sure they will be more then able to accommodate any non-meat-eater guests as well).

@Miss French Bulldog: That would be my only concern with this meal… no bbq sauce for me!

hhmmm…BBQ… I wanted to do BBQ for our rehearsal dinner, but Mr. CC wanted his favorite restaurant, so I lost out.

If it was up to my family we would serve Birria, Frijoles, Arroz y ensalada de papa. Otherwise known as Birria, beans, rice and potato salad. I don’t think they like the fact that I’m the odd one of the family. I had to be different and step out of our traditional Mexican wedding feast.

Your food looks delicious.

I would have really liked a BBQ buffet for a summer southern wedding - even the plastic plates to give a pop of color and a casual charm! :)

That piece of white bread screams Texas to me!

I have the opposite situation — my caterer’s top vegetarian dish is Indian. So whereas we aren’t Indian, we’ll be having a dish as if we were.

We are also debating having either BBQ or fajitas at our wedding! How much more Texan can you get? LOL I can just see my dad looking a piece of chicken cordon bleu with that “What the heck is this?” look! Even though there will be some elegant elements in our wedding food may not be one. I don’t want to make anyone uncomfortable.

1) I love how you say “big fana”
2) I went to a wedding last fall which had a party the night before the wedding for everyone invited to the wedding (the rehearsal din was 2 nights before) at the Salt Lick and it was AWESOME.

Yummy! I knew that plate was from the Salt Lick before I even read it. My FI is a UT grad and introduced me to the Salt Lick on my first trip there! We really didn’t consider a BBQ since so many of his friends have or still live in Texas and the BBQ in our area just doesn’t live up. So we are doing a fish fry (with plastic cups, etc) instead. :)
