I know I’m not the first bride in history to do this, but here goes…

I’M MAKING MY OWN WEDDING CAKES.

Oh - wait… see that? That little dangling “s” on the end there? You read right. More than one cake! Before you think I’ve completely gone off my rocker, let me console you with this pretty picture:

I guess we could buy the cakes - it’s really not important to us to have a tiered cake - but the thing is, I love to bake. LOVE IT. Hell, I’ve even got a batch of choco-chip cookies in the oven right now! My sister loves to bake, too - she’s thought about opening a bakery! I’m so happy she’s agreed to help me bake the cakes! Come to think of it, Mr. Bear Cub’s sister also loves to bake - and she used to work in a bakery decorating wedding cakes! Then again - who doesn’t like to bake?

Honestly, though, my idea to bake all of the cakes together spawned from the fact that I desperately miss spending time with my friends and my sister. Even before I moved to Chile, I didn’t get many opportunities to spend time with my friends and my family - we’re scattered all over the country! The idea is that one day before the wedding weekend (likely Wednesday) we (everyone who gets in on the whole “bake a cake” fiasco) will converge at our kitchen in Portland and have a wedding-cake baking party! I think it’s a smashing idea! (But no cake-smashing allow. Yet. ;) ) Especially because it means I’ll have an opportunity for more girls-only time before the wedding. :)

You might be thinking right now - how is she going to bake the cake on Wednesday for the wedding on the weekend? Here’s your answer:

You FREEZE the cake layers. Piece of cake! (Har har! ;) ) Seriously, I’ve tested this a few times now, and always to rave reviews about how moist and fluffy the cake is! This works, folks!

Icing is much less time-intensive (depending, of course), so let’s put it this way: this is totally doable. I love that our wedding will have this homemade touch!

My favorite thing about that cake up there? Simplicity (oh, and the lavender’s a nice touch, too ;) ).

Wow! I’m so in awe that you’re taking this on! My Joy of Cooking has a recipe and instructions for making a wedding cake (the tiered variety) and all I can think is … wow, there is no way I could do that.

I loooove chocolate cake. FH loves red velvet. So our wedding cake will have layers of both! (with ivory buttercream icing.) But I’m leaving that one to the pros!

Can I have some of those chocolate chip cookies? :-)

Yum sounds delicious. I am a huge fan of chocolate. So our cake is a chocolate cake with chocolate chips, with chocolate ganache and fresh strawberries in the center. It’s going to be cake-tastic! I can’t wait.

the bakery i’m ordering from freezes the cake layers on wednesday too and decorates the cake closer to the weekend. must be a common thing.

Theres another chocolate cake recipe that smitten kitchen uses, I think it’s from Gourmet, double chocolate. It really is the best, and it freezes beautifully!

I’m making my cakes as well, but I’m doing a Cheesecake bar…different types of cheesecake with lots of different toppings.

Favorite cakes ever: all-time fav has to be my mom’s specialty chocolate cake (not-so-secret ingredient=instant coffee) and buttercream icing, sorry it is a family secret recipe, no sharing! Second fav is red velvet cake with cream cheese icing :) I could go on and on…after all my name is miss sweets! haha. I think it is AWESOME that you are making your own cakes….those are the special touches that people will remember your wedding for! (as long as it is not too stressful, and it sounds like you have it under control!)

Personally I think home made cakes TASTE better then any bakery cake…every wedding I have been to, the cake has been realllllly bad. Makes me think of having the FMIL make her famous rum cake!

I can’t wait to hear about how your cake baking party goes and to see how lovely all your cakes look! I’ve been obsessed with cake baking for the past couple of years. My favorite is a raspberry velvet cake recipe I got from one of the chef’s at one of DC’s most famous restaurants, the Old Ebbitt Grill. The best part of that recipe is the cream cheese frosting, of course!

I’m really glad to hear of someone else taking this approach. I’m baking my own (more likely than not) because of dietary restrictions- I’m allergic to both gluten and dairy (I know, it sucks). We’re going to do smaller cakes for the guests as well, rather than one big cake. I’m excited for it- but my family thinks I’m crazy! I love cake, though, and absolutely refuse to go without cake on my wedding day just because bakeries in Hartford refuse to make an allergen-friendly cake.

I really like pinapple cake. And coconut cake - they’re really flavorful, but light. Definitely a plus after eating a meal at a wedding and then dancing! Though the real truth is that my favorite cake is a boxed yellow cake with canned chocolate icing ;)

@Jamie: wow, that does suck! :( what kind of cake are you going to make for yourself? I would have suggested a chiffon cake, but I’m pretty sure that has milk in it!
@Miss Gloss: I thought you were supposed to let the cakes thaw in the saran wrap? You frost them while they’re still frozen?

I used smitten kitchen’s wedding cake baking tips to make a three tiered cake for my future sister in law! I baked all three layers in BROOKLYN, froze them in my freezer, transported them to PENNSYLVANIA, and iced it the morning of. Everyone said it was delicious!

Freezing is the way to go!
My roommate is a master baker and we always freeze her creations. Fluffy french bread? Light and crispy cinnamon waffles? Ingenious strawberry-rhubarb muffins?
Everything tastes just fine, if not better, after it’s been on ice for a few days.
Power to the freezer people!

I’ve been debating on doing a tiered cake or separating them… after the pics, I’m REALLY considering not going tiered… hmm…
