… or “Favor FAIL”

By now, it’s no secret to you all that I’ve got a penchant for puns. So I knew I’d want to accompany the note explaining our charity donation to the Wetlands Institute with an edible “turtle” treat combining chocolate, caramel and pecans.

I’d never tempered chocolate before, but after reading up on the process — which sounded simple enough — I attempted to melt some in a makeshift double boiler so I could create candies using a turtle mold I had ordered online. And… it really didn’t work well at all.

The mold was too shallow to create a substantial piece of candy, so any plans to create filled molded candies wouldn’t work out if I stuck with this particular turtle shape. Larger turtle molds, I discovered, existed, but would require much more chocolate — making this a pretty pricey favor!

So I started seeking out recipes that included the key ingredients in a non-molded form. I loved the idea of this recipe — because bark is simple enough, and is supposed to be somewhat jagged and imprecise, right? But again, I had issues with the final product. The caramel’s consistency reminded me of Sugar Daddy candies — painful to eat — and, despite my best efforts, this batch of chocolate bloomed.

As you can imagine, I was getting pretty frustrated. I didn’t want to give up on my edible pun favors, so Mr. Bruschetta suggested I consider a baking — rather than candy-making — project, since I didn’t have any previous experience working with chocolate, but I bake (successfully!) pretty often.

After a bit of searching, I settled on Baci di Dama, or “Lady’s Kisses” — chocolate and hazelnut sandwich cookies that originated from Piedmont in Northern Italy. Okay, so no pecans, but I figured we could add a caramel liquor to the ganache. Two outta three ain’t bad, right?

While this recipe turned out well — those little cookies were delish! — it also took way too long to finish one batch. And since the “kisses” are rather tiny, I thought each guest would need to receive several…vwhich translates into much more pre-wedding baking than time permitted! (I had hoped to find a recipe I could make about two weeks in advance, and then either freeze or store in airtight containers until closer to our date.)

At this point, I started to seriously reconsider making our wedding favors myself. With each new idea, I’d been researching packaging options — including clear favor boxes and a variety of cellophane bags creatively dressed up — so I was expending time and mental energy outside of the kitchen as well.

After a month of futzing with failed favors, I needed a solution that saved me any additional stress… but you’ll hafta wait for a future post to hear what turtle-esque favor we selected!

I’m always so embarrassed when kitchen endeavors don’t work out as I’d hoped… so feel free to commiserate with your own DIY wedding FAIL.

Anyone else plan on — but then reconsider — making your favors?

I think we’ve been having the same thought processes, Bruschetta! I’ve been planning to make candy for our favors too but I’m very close to throwing in the towel and doing something else altogether. I have another date with my kitchen scheduled for tonight, so we’ll see what happens…

Those Baci look awesome, I might have to make them. I wanted to make cookies as our favors (black and white cookies to go with our color scheme), but my mom, sister AND husband all pitched a fit. They said I would be too stressed out if I did it. In the end, I kind of agreed with them, so I gave up my idea.

When I made turtles in HS I put 4 pecans together in a star shape, and poured melted caramel over them. Then the melted chocolate and waited for them to harden up. I think I got the recipe from http://www.foodnetwork.com

We were contemplating DIYing both StDs & Invites (FI’s quite the talented film & DVD maker & I can craft a cute card with the best of them!), but creating what we envisioned is taking MUCH longer than we expected! Good thing we started our StDs so far in advance…the homemade “teaser trailer” for our wedding is still a “go”, but we’ve scrapped the idea of making a full length trailer + crafted stationary for our wedding suite and chosen to spend the cash, but save our sanity (& future marriage), by ordering our wedding stationary.

Can’t wait to see your solution!

off topic, but FI and I had a Pizza DIY fail a few weeks ago… the dough wouldn’t stay out, it kept springing back, then our pizza stone yes SOLID STONE split in half in the oven with our calzones (because that was the best we could do with our dough) and there was huge gooooey mess in the oven. we ended up at mcdonalds lol

Oh tempered choc is so difficult. You get a drop of moisture from steam in the boiler in there and it seizes up. You don’t hit the exact few degrees, it’ll seize up or crack or bloom. If it’s not on the right counter, it’ll seize up or crack. I tried it once, and it was a massive massive FAIL. Never again.

I love those baci! They look so yummy! Can’t wait to see what you come up with.

I planned on baking cookies for the wedding, but ran out of time. My sister (very kindly) baked them instead two nights before the wedding. Yes, she was a rockin’ MOH.

My family and I make chocolates every year for Christmas so if anyone has questions with it then can contact me. Normally my family spends a whole weekend end of November and whip out hundreds.

Here’s an idea if you still want to do chocolates. It’s sort of cheating but it totally works. They sell melting chocolates at crafts stores like Michaels. They act like tempered chocolate…they melt nicely and set up nicely and the best part is you don’t have to temper them. I’ve used them in the past, and as a pastry chef….I’d much rather use them then bothering with the tempering process. It’s just a big pain in the butt! Good Luck!

I made cherry jam for my favours and was a little worried when the first two batches didn’t set - soooo runny! I tweaked the recipe a bit and thank goodness the next 12 batches worked!

I can completely understand! I wanted to make buckeyes — and I did — but I had never made them before and they turned out too large, plus I ruined my chocolate. Each party (whether it was a single guest or a family of 4!) got 3 buckeyes. Eh.

I probably just would have bought boxes of Turtles candy, and stuck a personalized label on them (nah, I probably would have packaged them in cellophane, I admit it). =D I admire your insistence on making them yourself.

I wish we had reconsidered our THREE HUNDRED FIFTY Oreo truffles, but other than a few misshapen ones, they were a tremendous success. I can’t wait to see your favors! The Lady Kisses look like French Macarons!
