When I'm not drooling over wedding blogs, I'm attending grad school, out being a foodie, or attempting to "walk" our cat at the park. Two things guaranteed to excite me are wedding cakes and breaking out my suitcase to travel. Mr. Sunbeam and I are personalizing our hometown wedding to celebrate our high school sweetheart status and PA roots with a few CA touches. After ten years of dating we couldn't be more excited to call each other husband and wife!

Cheese Please!

Mmm. Cheese. Ever since moving to California I have acquired a taste for good cheeses, which goes hand in hand with Mr. Sunbeam’s love of wine. Naturally, we want to include a cheese course in our menu. We have  been to the Cheese School in San Francisco twice, and also conducted a few cheese tastings on our own.

If you’re into cheese and want to pick some yourself for your wedding, I recommend tasting the cheeses along with your chosen wines, because cheese can really effect the taste of you wine.

For instance, we tried an epoisse with a bordeaux and it wiped out the flavor completely! We were shocked. Of course, that cheese is much to strong for a wedding. Here are some of the cheeses we considered:

Sadly, I do not remember enough details about each cheese to tell you what was good or bad about every single one, but I can tell you about a few. Initially, we were all about Cowgirl Creamery, since it’s a local cheesery, but we weren’t a fan of many of their cheeses! The Brilliat-Savarin is so good. Think cheese in the form of butter. This one is high on our list. The Mimolette was one of Mr. Sunbeam’s favorites because he is a salt dude. It’s a very hard cheese, very salty, but pretty yummy. This one is on the maybe list, because the saltiness might be verging on offensive for the average Joe. The Humboldt Fog is so good. We have wine and cheese sometimes at work, and it’s always a big hit. The only thing is, it’s kinda crumbly, so it can be messy. We also really liked the Midnight Moon. There are so many good choices out there!

We plan to do the cheese course during cocktail hour. We’ve asked the cheese to be portioned and served on cheese plates set at every third person. Oh, it would be helpful if I told you we’re doing long, banquet-style seating. Here are some cheese display inspirations.

I love the Swiss cheese menu and the little paper basket in the last image. I wonder where Martha got it?! We’ve also tossed around the idea of doing cheese on pieces of slate and writing the types in chalk or putting the cheese on normal white rectangular plates and having little flags with the name of each cheese on them. The details are so hard to decide!

oooooohhhh.. a cheese course!! It’s not in our budget, sadly, but I can dream, right?

I love knowing what each cheese is - I think a little flag, or perhaps a special cheese menu would be a good idea.

I love the idea of a cheese course! I thought about making a cheeseboard centerpiece but I think that might be too pricey.

I’m from NY and Yancy Fancy’s strawberries and champagne cheese is creamy and slightly sweet with a soft tang on the finish. So Good!

mmmm, this is a great idea! I love Cowgirl’s Red Hawk and of course Mt Tam- it’s a tradition in SF I think! Brillat-Savarin is another great one. I like the idea of having them on slates with little chalk boards, or you could do a cheese cart like at Gary Danko!

I LOVE the flag idea, SO cute! You can do them in wedding colors ;) I’m curious about ash in cheese. Does it make it grainy? I love cheese and would probably just eat it and be cool with it!

I LOVE Cowgirl Creamery cheeses (if you get a chance, you should stop by one of their cheese tastings). Red Hawk is fun (and funky), but probably too much for a wedding. Also not wedding appropriate, but totally delicious - their ricotta and paneer are un. be. leavable. so so good.

I also have a huge soft spot for Cypress Grove cheeses. Humbolt Fog is an eternal love of mine, and Midnight Moon is equally as incredible.

I haven’t heard of the rest, but you’re definitely after my heart with those!

Ohhh this cheese school sounds awesome! Great advice to pair the cheeses with the wine! I’m personally a huge fan of Manchego with wine. It’s the perfect amount of salt, and easy to hand hold when you’ve got a glass of wine in your other hand :)

@LatteLove: I’ve seen those on cake wrecks.. hahaha! I think we’ll just stick cheese plates ;)

@YSAP2M: The ash doesn’t make it grainy at all and it’s just a slight amount! It’s really an interesting cheese, you should try it!

We are not doing a cheese course, but I *love* *love* (*love*) cheese and I wish we were. What a great idea! We are doing cheese and cracker platters during the cocktail hour but (1) we don’t get to eat it (dang it!), (2) we don’t get to pick the cheeses (ARG!), and (3) it’s SO not the same as sharing a platter with your tablemates.

That looks delicious!!! We’re also having cheese during our cocktail hour, but i won’t be nearly as fancy as yours…and I’m leaving the details up to the caterers…one less thing to worry about =]

I love cheese (and wine) as well — however, are you planning on having your guests seated during cocktail hour? Otherwise they may be wary to pick up the cheeses unless someone lets them know they are allowed to indulge…although if they are meant as appetizers once seated, just disregard the comment

Mmm…cheese. I would love to have a cheese course at our wedding. That triple cream cheese you mentioned is one of my all time favorites. You’re right about the butter aspect. I also really like Humboldt Fog and Midnight Moon. Hmmm….some other favorites include Piave, Grayson, Camembert, Moncabrer….Um yeah, I love cheese.
Any New Yorkers out there should check out Stinky Bklyn. They have great cheeses.
