Project: Dessert Buffet!

September 4th, 2009 @ 6:12 pm by Mrs. Sprinkle

You guys already know that I am making all of the cupcakes for our dessert buffet. So I guess I better tell you what else we are serving after dinner…

I LOVE sweets. Cakes, cupcakes, cookies, bars, ice cream, candy YUM. I rarely eat such things unless I bake them myself (you can’t walk into most places and order a vegan dessert), so this is such a special treat! We started off with a huge list of our favorite desserts and narrowed it down to these:

Dessert Buffet for 100 Guests! (all vegan)

Cupcakes:

  • Red Velvet Cupcakes with Buttercream Frosting (30 full size, 12 mini)
  • Lemon Gem Cupcakes with Light Lemon Icing (30 full size, 12 mini)
  • Vanilla Cupcakes with Chocolate Buttercream Frosting (30 full size, 12 mini)

Cakes:

  • Vanilla Pound Cake with Fresh Strawberries (2 large pound cakes)
  • Amazing Apple Crisp (1 large crisp)
  • Carrot Cake with Cream Cheese Frosting (1 cake, double layer)
  • Black Chocolate Cake with Raspberries (1 cake, double layer)
  • Chocolate Coconut Cream Pie (1 large pie)

Other:

  • Blueberry Chocolate Chip Blondie Bars (36 bars)
  • Chocolate Chip Cookies (48 cookies)
  • Peanut Butter Cups (60 cups)

I know it is a ton of food. It’s enough for each guest to have one cupcake, one slice of cake or pie, and one bar/cookie or cup. Just be glad our planner (and the lack of freezer space!) talked us out of the drum of ice cream!

Along with the cupcakes, I will be making the cookies and blondie bars. Everything else is being made by a friend or a pro vegan cake baker. So many of my friends volunteered to help make dessert, and after weeks of going back and forth, I decided to accept their help. As you get closer and closer to the big day, it gets easier and easier to accept help and start delegating tasks!

I haven’t quite figured out the logistics yet. I have never been to a wedding with a dessert buffet, or any dessert other than wedding cake! Do guests cut slices themselves, or are the cakes pre-cut? It sounds a little messy, but I am sure it will work out. The desserts will be brought out an hour after dinner and left out for the rest of the night, so I am hoping guests will just nibble their way through everything for a few hours! At the end of the night our caterer donates all of the leftover food to a local shelter, so I won’t fret if we still have 3 dozen cupcakes and a whole cake still standing!

Speaking of standing… I have spent the last few weeks scouring every thrift store in the area for cake stands. I managed to scrounge up two for under $5 at our nearest Goodwill, but I needed more. Our caterer is providing the cupcake stand, but that still leaves the cakes and pies out in the cold! Luckily, I arrived home yesterday to six Crate and Barrel boxes sitting on my front porch. Some super sweet friends ordered up every single cake stand we had on our registry and had them delivered to our house! Looks like our buffet will be super stylish!

Your buffet is making me hungry! It sounds so delicious and even better that you and friends are making most of it. I love vegan desserts! My brother is a vegan too so we eat vegan food all the time and with desserts none of our meat eating relatives can tell the difference! (side note: If you are ever in DC there is a great vegan bakery, Sticky Fingers).

We are doing a dessert buffet of petit fours, chocolate covered strawberries, cupcakes (red velvet, strawberry, lemon, lime and peanut butter cake), bars, Italian cookies and a crepe and ice cream sundae bar. Our caterer is doing the petit fours, bars, sundae bar/crepe bar. A local bakery is doing the cupcakes and my aunt is making the Italian cookies!

We are also doing a dessert buffet. I love the idea of having fruit crisps. I’ve also been wondering about the serving aspect, so I can’t wait to hear how it goes.

we did a dessert buffet and the caterer/venue (one in the same) just stationed a staff person by the buffet to do the serving — it worked great! I would think who ever would be in charge of cutting up a traditional wedding cake could be repurposed to man the dessert buffet…..

I’m getting hungry just reading your list! How about adding a chocolate fondue fountain with fresh fruit? Now I’m REALLY hungry!

yum!! where are these recipes!!!! Dying to try the red velvet and carrot cake! what great friends you have, the cake stands are awesome.. I heart CnB.

No dessert buffet for us, but they are passing around ‘mini-sweets’ in addition to our cake, coffee/espresso station, and chocolate fountain. Tiny little chocolate cups filled with chocolate mousse - it is so good!

I’m so impressed with your vegan menu! Due to lack of experience with it, I’ve always thought of vegan food as bland and boring, and you’ve helped me realize that is definitely NOT the case!! :)

I was surprised as well that vegan food can be so yummy sounding! Sounds like a delicious, and dare I say healthy?, dessert buffet!

Sounds delicious! We had vegan cake at our wedding and it was a big hit. :)

And, I think it’s funny when people equate vegan with healthy. Healthier? Probably. Healthy? Not really. I made vegan cookies & cream oreo cupcakes for my in-laws and they got super excited about the “healthy” cupcakes. Those went fast!

The Blueberry Chocolate Chip Blondie Bars sound amazing. Can you PM me the recipe? Or will you post it! That dessert is all my favorite flavors in one!

your buffet sounds delish! i think it’ll help guests if the cakes were presliced. then it would be easy just to come up and grab some cake without worrying about if it were okay to cut
