Saturday was our first cake tasting, and I was possibly a little too excited about it. If it has anything to do with frosting and sugar and butter, well… I’m going to be excited. We went to a tasting at one of the more well known shops in our area. They did my sister’s cake (which was delish) and have gotten great reviews.

Now, let me preface this by saying I was 99.9% sure what type of cake we were going to get if we decided to go with this bakery before we even set foot inside of its doors. It’s not that I am a complete control-freak bride. Rather, I’ve had it several times at my old place of employment, and just had it for Sister French Fries’ and Dad French Fries’ birthdays a few weeks ago. Every time I’ve had it, it has been amazing. So, it’s a safe choice, even though it’s not exactly your typical wedding cake.

Because Mr. French Fries and I have discussed — and are in agreement — that this cake would be perfect, I hesitated to try it again, but we decided to add it to the list, just to be on the safe side. We narrowed it down to the following choices:

  • Genoise cake with vanilla mousse and fresh strawberries covered with white chocolate ganache
  • Chocolate cake with chocolate mousse covered with chocolate ganache
  • Red velvet cake with cream cheese filling, covered with white chocolate ganache
  • Signature cheesecake with raspberry filling, covered with chocolate ganache

Yum! I took a picture of all of the choices and will report back in a separate post about our thoughts.

I have also narrowed down what I want the cake to look like after gathering several inspiration photos. This one has all of the elements I’m looking for, however.

The basics: white frosting/ganache without any other real decoration other than ribbon at the bottom of each tier and a small cluster of sugar flowers. Monochromatic, but possibly with a slight light pink tint to the flowers. I’d prefer buttercream to fondant, but white chocolate ganache would be perfect. I want the tiers to be very gradually stacked, rather than having a large distinction between each size of tier (if that makes sense). I also would love to use a simple white cake pedestal rather than the large, silver serving pedestals that you can rent from the bakery. Oh, and it has to taste absolutely fantastic. You know, just a small list of requirements.

Also, I’m considering having them save the top tier from being served, but not so that we can eat it on our anniversary. It’s so I/we can eat it after we come back from our honeymoon. I figure, we’re spending more on a cake than we do on groceries for 3 months, so… shouldn’t we get to enjoy it more than once? I think so.

YUM! That sounds really good - I’d go for the red velvet with white chocolate ganache if I were you.

One of the reasons we chose our bakery is because they give you a free anniversary cake on your 1-year-anniversary, instead of having you save the top layer. As our cake lady told us, no matter how good the cake was to begin with, a one-year-old frozen cake will taste like a one-year-old frozen cake!

We are having hummingbird cake with pecan praline filling for the bottom and top tiers. The middle tier is raspberry fudge with rum filling. Hummingbird is my favorite so we are saving the top not necessarily for our one year anniversary either but so we can enjoy it after the wedding as well.

Yummy, can’t wait to see pictures of everything you tried! I’ve heard a rumor that our wedding venue coordinator will put some cake and champagne in our get away car. I’m hoping it’s not just a rumor. :)

You went to Simma’s didn’t you?! I really would suggest trying out several options for places….we found some great cake places in waukesha that were WAY cheaper and WAY tastier. Can’t wait to see what you finally choose!

So is anyone else drooling, or am I the only one? Also, I love your inspiration photo, and the idea of saving the top tier for after the honeymoon is actually just what I’ve been looking for! I really don’t get excited about the prospect of eating year-old cake (not to mention the logistics of moving it across the country), but it would be great to come back to after the honeymoon! I can’t wait to see what you decide!

I will be adding that picture to my inspiration file. We’re having our cake done through our reception site/caterer (it’s too good of a deal) but the catch is that they will only do white cakes and VERY simple decorations. That cake is simple and lovely and elegant. Perfect!

We have some cake saved in our freezer, and we’re going to enjoy some of it on our 1/4 anniversary :-) another chunk at our six month-a-versary :-) and then more cake at 3/4 of the time through our first married year. Our bakery provides a bonus free mini cake for our anniversary…so we’ll have a sweet year ;-)

Those sound like some very yummy flavors! We cut ours into quarters before we froze it and are planning on eating it Bruschetta style. Our bakery does the same, with a complimentary mini-cake for our anniversary!
