*This recipe actually belongs to Bridesmaid Georgia’s mom and was only featured in The Cowboy Boots’ out-of-town bags. Luckily, The Georgias were generous enough to share it with us! Believe me, this is good, people! There were trades going on like taffy for more granola, because people loved it so much.

Greenie’s Granola: The Cowboy Boots’ Special Batch

Love at The Ranch: The Cowboy Boots' Granola Recipe* :  wedding diy favors food Granola01  Makes 8 cups of Granola

Ingredients:

  • 6 cups old fashion rolled oats (no quick cook)
  • 2 cups honey (we like Colorado Madhava Ambrosia Honey)
  • 1 cup good oil
  • 3 cups raw sunflower seeds
  • 2 cups sesame seeds
  • 3 cups almond slivers
  • 2 cups Cranberries, Regular & Golden Raisins (**Note: Add at end, Do not cook fruit in oven!)

Place oil & honey in saucepan on very low heat. Mix oats, nuts & seeds together in large bowl, and add honey/oil to bowl and mix well.

Cover a large cookie sheet with granola about 1/2 inch thick. Cover entirely, and try to keep granola spread evenly across cookie sheet. Bake 10-12 minutes until golden, DO NOT LET BURN.

Once out of the oven, scoop granola into a bowl and stick in refrigerator ’til mostly cool (it’s helpful to place wax paper in bowl, as granola will harden in fridge). Add dried fruit to cooled granola, and bag!

Enjoy with yogurt & fresh fruit, oatmeal, milk, or even all alone.

I am going to put this in my OOT too! A question: how much in advance can I make it for it to be fresh on the day-of? If I am getting married on a Saturday, I can make it as early as ______……?

Just a tip . . . I’ve made granola in a slow cooker too. It takes longer to cook - maybe 4-5 hours on low, but there’s less risk of it burning. I know that sounds like a ridiculously long time, but if you’re just hanging around the house anyway you really don’t notice it. Just stir it every 45 mins or so. Plus, you can make much more this way than in the oven (since in the oven it has be all spread out in a thin layer).

@KtobeC: @jmc: @KMSull: It’s best to prepare a week to two before as it is a bit of a process. And, you feel like a granola factory after just a few batches, but so long as you store properly in plastic baggie or air-tight container it will last for quite awhile. The sooner you make it up to the time you plan to use it, the moister it will be.

@melinda: @Deanna: For good oil I recommend canola, sunflower etc… you want something with some flavor.

what temperature did you cook the granola at?
and is that 1 cup each of cranberries and raisins or 1 cup total of dried fruit? thanks! i am including granola as part of the favor in my wedding.
