Mr. Cheeseburger and I both love funfetti cake with rainbow chip icing. In my opinion, it is the. best. cake. ever. Hands down.

If I had my way, I would be DIYing our funfetti wedding cake, but Cheeseburger Mom put the brakes on that idea.
She was totally freaked out by the thought, wondering when it would get made, how we would transport it (remember that our wedding is 3 hours away from any home base?), who would put the finishing touches on it, etc. Even after showing her many other brides’ DIY trials and successes, she still wasn’t convinced. In an effort to further convince her that DIY was the fiscally-responsibly decision, I spent some time one afternoon on this site. As I went through their store, adding the supplies I thought I would need to my cart, my total quickly climbed. When it was all said and done, my total was over $220.00! That is before all of the mix, icing, and other ingredients for the final cake, plus enough for a trial or two. Yikes. Mom strikes again.
She is always right!
And so, the quest for cake inspiration as well as bakers in our area began. I love the look of fondant cakes, but I’m not a huge fan of the taste. Most bakers that I spoke to said that the look of most fondant designs can also be done in buttercream (if you’re good, which, I of course, am not). So, take a peek at what I’ve been ogling as inspiration! Enjoy!
