An optimist at heart, my motto is to turn your "what ifs?" into "so whats!". My fiance is a radio producer and the biggest Cubs fan you'll meet - our apartment decor definitely shows it. We are planning an intimate wedding in the Virgin Islands and a cocktail party in June for 150 of our closest friends.
About Mrs. Nachos

OK, I’ll Let Them Eat Cake

December 29th, 2009 @ 10:44 am by Mrs. Nachos

The wedding contract that we chose included a cake. $125. For. Six. People.

That’s an actual photo from our hotel on TripAdvisor and, um, I could probably eat that thing by myself. We decided to save some money and take the cake out of the contract. When I called the coordinator to let him know, he responded with, “But the cake makes for some great photos, are you sure?” Yeah, I’m sure. His response: “You could always upgrade to a bigger cake.” Again, no thanks. The whole point of the phone call was to skip the cake and save some money, not upgrade and spend some more!

A few days later, I was talking to my good friend who is a fantastic baker and casually and kind of jokingly (*note – kind of) said I wish she could make a cake for us for our home party. And she totally was all for it! I was shocked; she said she was honored. Hooray!

Personal pic- us at a private Howie Day show (if you squint really hard you can kind of see him in the background singing away)

I told her she had free rein over the cake because whatever she wanted to make, I knew I would love. I told her it didn’t have to be anything like a traditional wedding cake. I’d be happy with a plate of her scotcheroos that I’m completely addicted to. They are a yummy twist on Rice Krispies treats complete with peanut butter, butterscotch and chocolate incorporated in. I swear, they’re like a little piece of heaven.

Personal pic – this is the cake she made me for my birthday because I’m addicted to Trader Joe’s Peppermint Bark

At first, I didn’t want to know anything about what she was planning, but a few days ago I asked her if I should get a cake topper. She said I didn’t have to but I could if I wanted her to add one. Then she asked if I wanted to see a pic of what she was planning and I told her that if she wanted to show me, I wouldn’t try to stop her :) .

So she pulled up a picture of this…

How frickin’ cute is that!?! Here’s her description…

  • Bottom layer- Chocolate with buttercream filling that has toffee ground into it
  • Middle layer- Yellow cake with ganache filling
  • Top- Another chocolate with plain vanilla buttercream filling

From her email: “I think I’m going to do a pretty ocean blue color instead of it being all cream colored… and maybe chill out a little on some of the sea shells/fences and add some white or pale-colored flowers with it. And of course, there will be scotcheroos present… just because.”

I love this girl and am completely honored that she is doing this for us. And I seriously cannot wait to see this cake!

Did you have a friend bake you a cake for any of your wedding related parties? How did it turn out?

My stepsister and stepmom made the cake. YUM-O! There was not a drop of cake left. In fact, they have promised to make us another cake for our anniversary since we needed to use the top layer for guests.

I had two pieces. I didn’t care.

I would have saved myself the money too! I think we may have an awesome baker friend do our cake for us too, if she’s willing! FI has been talking about a cake she made for a party for a good two years now, so he’s super excited about the prospect of her doing our cake!

That pic she has as inspiration was on my original inspiration board! :) Love it - it’s so fun and I love the deck chairs on top of it. We have a friend of the family making a traditional fruit cake and we’re probably going to buy a smaller, vanilla buttercream cake for those who don’t like fruit cake - or we’ll have dessert appetisers, I haven’t decided yet.

My Bestie is a great baker and Mr Frenchie asked her a couple times to bake our cake, but I kept telling her she had enough going on being a BM hahaha Mr Frenchie was set on her doing our cake b/c he LOVES her carrot cake but in our case being a BM and baking a cake would have been too much.
