In fact, in (one of) my dream wedding(s), dessert is actually a scoop or two of gelato. But Mr. Spaniel loves him some cake (and really, I think, so do most people), and it is a wedding, so I put on my research hat (what? I like hats) and looked for inspiration!

I got the idea pretty early on that I wanted a mehndi-styled cake, and there was no shortage of beautiful inspiration!

After tasting a few samples, though, we realized that we didn’t like the taste of fondant, and we also really wanted to use our favorite local bakery, Porto’s, for the cake—and they don’t even use fondant. Buttercream doesn’t really lend itself as well to intricate patterns, so I looked around for a less intricate henna-inspired pattern that would be easier to apply to a buttercream-covered cake, and I found this.

They actually had a very similar design in their portfolio already, which increased my confidence. Ours will have three tiers, a light cream colored background, and chocolate fudge decoration. I guess if it’s that pretty, I will let them eat cake! HA! Ha, ha. Oh.

I think I love any dessert. We are having a small tier for cutting and to hold our fun topper but otherwise we are doing pies, mini cheesecakes and a few other things. That first main photo with the red and white cake and the brownish color and white cake–stunning. I would not want to be the one who had to put that on :o

All of the cakes you found are gorgeous but I thought I’d chime in with some cake tips:

- If the fondant is what’s swaying you, reconsider: the fondant is not meant to be eaten.

- Ask your baker if he’s comfortable doing a mock-up for you of something more complex; more than likely they’ll give it a try. It may pay off in a big way.

I work for a bakery in Pittsburgh and there is literally NOTHING we won’t try at least once in the name of someone’s wedding day. Don’t be afraid to ask your baker to reach for the stars, it’s what we live for.

@Eva: Our bakery is known less for its artistry and more for its extremely delicious cake (the ONLY cake I like, really). ;) I don’t even want to take chances!
