Making It After Faking It

Yesterday was a momentous occasion for the Deviled Eggs—we celebrated our first wedding anniversary! We’ve been through a lot in the last year. But no matter what life gave us, we took each challenge as an opportunity to grow together in love and as a couple. We celebrated the day by enjoying a fancy dinner in the ‘Burgh and then went home to enjoy the top tier of our wedding cake.

But for those of you who remember my DIY wedding cake, the top tier wasn’t real. It was just a decorated cake dummy. In order for us to do the traditional wedding cake sampling on our anniversary, I had to make a replica of our cake as a substitute for the fake one.

Here’s how it turned out:

At the request of Mr. DE, the anniversary cake was fondant-covered carrot cake with cream cheese frosting and filling. It was yummy! I tweaked the recipe I’ve used in the past and swapped out some of the fresh grated carrots for a few jars of carrot baby food. This intensified the flavor and made it very moist. I was really impressed with how it tasted.

I know some couples enjoy eating their frozen tier, but fresh-baked cake is better than frozen any day. Ours was delicious!

What are your thoughts on eating your top tier on your anniversary? For those of you who ate a frozen cake, was it any good?

I would never think to use baby food in a cake recipe! How interesting!

AWESOME! You are soooo talented! Recall our cakewreck top tier “disappeared”. We’re heading back down to the Homestead this weekend for our anniversary, where they’ll make us a new and different wedding cake top.

Love your work. Wish you could have made our cake!

I think we will eat our top tier on our one month-aversary and just go out for cheesecake (which we both love!) for our 1 year. The whole freeze your cake for a year and then pretend it tastes good things doesn’t appeal to me

ya i agree with Ktisthatbees… the whole freezing for a year and pretend it taste good.. not for me. I’m serving the top tier.. saves money on the cake. and for one year we will just enjoy desert somewhere nice :)

YES! I always make carrot cake with baby food carrots - people think its weird, but I love the flavor and texture it adds!

The only thing I’m worried about is having room in the freezer! I’ll eat cake any time, any way, all the time. I am a total cake freak!

We did the traditional freeze-and-eat on your 1st anniversary - so glad we did!

I can honestly say that it was JUST as good as it was on our wedding day! Which was absolutely, unbelievably delicious. {Our baker gave us specific instructions on how to wrap & store the topper, in order to keep the moisture and freshness locked in. And boy, did it work!}

Your reproduction looks exactly like the original. Who’d thought to use baby food instead of fresh carrots. I’ll have to try this.

your second cake looks great! for a second i thought it was the original one. i forgot the top layer was a dummy one.

Our baker will give you an exact replica of your top tier on your first anniversary (for free!) if you bring her a professional photo of the cake for her portfolio. We’re digging into the real one on our wedding night, most likely.
