After six and a half years of many late night walks, watching DVDs together in bed, travelling to places like New York, and Tobermory, doing Sudokus together on the couch, lots of Indian food, the occasional yoga class, moving in together and so much more, Mr. Knitting and I are planning a cozy Christmasy (it's a word!), vintage wedding in Toronto complete with many DIY projects (eek!) and lots of help from our amazing group of family and friends.

Let Them Eat (Vegan) Cake

I still haven’t made a decision about which cake to choose, and frankly I’m probably not really going to actively worry about that for a while. However, I have figured out a new way to include even more dessert! I have a lot of vegans in my circle of family and friends. As I have mentioned (more than once) I love to bake. These two facts have led me to the decision that instead of buying a separate vegan dessert I will be making one myself for the vegans at the wedding. I’m really excited about this.

I know a lot of people think that vegan desserts are completely dry and tasteless and completely unappetizing. NOT TRUE. Check these babies out:

Yummy right? Anyway, I’m not sure what type of vegan dessert I’ll make, but these are my two favourite vegan dessert books:

The 100 Best Vegan Baking Recipes by Kris Holechek

I absolutely love this book. Everything I’ve made from it has been really delicious, but I think the apple and carrot cakes are my favourites at the moment.

Vegan Cookies Invade Your Cookie Jar by Chandra Isa Moscovitz and Terry Hope Romero

Amazing book. It has everything from classic oatmeal raisin cookies to incredibly decadent caramel pecans bars to Oreos. So yummy.

I haven’t made any decisions yet and, as I mentioned, I probably won’t for a while. I’m really excited about this plan and I love that I’ll be able to provide fantastic food for my vegan family and friends.

How have to accommodated your friends’ and family’s dietary needs at your wedding? Does anyone have a favourite vegan baking recipe they can recommend?

That’s so sweet that you’re making something for the vegan guests! I don’t think I’ve ever had a vegan dessert, but those look seriously tasty!

I’m sure it will be appreciated! We found out halfway through planning that I’m allergic to wheat (flour!) so my father is making us a wheat-free cake, while the rest of the party munches on the yummy cake I picked out! FI is such a sport, cutting the mini-cake so I can enjoy it too!

I had to come over and comment on this because if you havent tried these yet, you MUST! Alicia Silverstone has a recipe in her book The Kind Diet for Vegan Chocolate Peanut Butter Cups. And OMG they are to DIE for. I made some and DH had no idea they were vegan until I told him. Recipe is here.

Oh my gosh, I’m not vegan at all but I have a family member who is, and she made us all vegan cupcakes about a year and a half ago. I just DIED. They are probably the best things I have ever tasted in my life! So moist and sweet, but not over so, 100 zillion times better than normal cupcakes! I prefer vegan cake now to regular cake on most occasions. Good luck with the cake making, I know it will turn out delicious!

Yay for vegan dessert! Also make sure you check out “Vegan Cupcakes Take Over the World,” also by Chandra and Terry- the Mexican hot chocolate ones are amazing!! Now if you have a delicious wheat/dairy free dessert I’m all ears….we have a few peeps with gluten allergies attending!

Awesome! I had the same doubts about vegan desserts until I tried the baked goods at a local vegan bakery called Sticky Fingers, and I was shocked at how yummy everything was…in fact even better!

Yes, good luck with the cake making!!! I’m no baker so I have no advice, but I have a feeling you probably don’t need help in that department and like Tess said, know it will turn out delicious!

@toothfairyb: mmm I may need to try this. The cake looks really good and I’m quite intrigued by the avocado icing!
@KellyV: Those PB cups are actually the first vegan dessert I ever made and I also agree that they are the best. Mr. K requests them all the time.
@Miss Stripes: I love this book! The cookies and cream cupcakes in my post are from there and I love them. I’ll have to try the mexican hot chocolate ones next.

@Miss Stripes: Gluten free and vegan is hard. My dad is a gluten free vegan and his baking attempts have not been too good. Have you seen the Babycakes NYC cookbook? That might have some good options, although my dad’s attempts at those cupcakes have not been good…

Aw that is super sweet of you. Vegan desserts are so good, I think honestly just as good as regular sweets… or at least, I can’t tell a difference! I am a big big fan of Vegan Cupcakes Take Over the World… Something wintry might be nice to go with your winter wedding… Maybe a spice cake or red velvet cake or something?

@Miss Stripes — The babycakes book could probably work well, and Vegan Cupcakes Take Over the World has a few GF recipes. My ex was gluten/dairy free and a lot of times I made cakes/brownies from Whole Foods’ 365-mixes and they were quite good. Good luck, GF baking can be tricky. :/ I don’t miss it!

I am eat a vegan diet. My FI is allergic to dairy, eggs and nuts/peanuts so I have done my share of vegan baking and it all has been super tasty.

We have to accommodate people who more-or-less follow kosher dietary restrictions while not having a certified kosher wedding (i.e. myself and all my fam is having the fish/veggie choices) and then ones where there’s a medical issue, like celiac’s disease. For dessert we kept it easy with having sorbet since it doesn’t have wheat/dairy/etc. Then again with the exception of religious dietary restrictions we don’t really have any food issues.

That is SO thoughtful of you! I am vegan, so I very much appreciate the thought you are putting in with that. I’m pretty sure we are going to have a small vegan wedding cake that we cut for the ceremony. I am making a dessert buffet with lots of vegan-friendly items and I’m sure we will also buy some premade non-vegan items as well. Agreed that many vegan baked goods are dry and just don’t taste as good as the non-vegan kind…so I plan to hopefully surprise some people with tasty moist vegan desserts that everyone can enjoy. I also love Vegan Cupcakes Take Over the World, everything I’ve made (with my own variations) has turned out amazing!

Im impressed, that carrot cake looks good…mmm. We have quite a few gluten-intolerant people at our wedding so Im currently hunting down gluten free cupcake recipes so they dont have to miss out at cake time…we dont have any vegans though.

I recently discovered the Cherrybrook Kitchen boxed cake/cookie mixes. They have been great for making treats for friends that don’t eat eggs or need gluten-free foods. You can buy them on Amazon.com and some grocery stores.
