Cupcake Experiment Numero Uno

We are having cupcakes at our wedding, and making them ourselves. So, the logical thing to do for the next few months is to try every single cupcake recipe we can find to discover the kings of cupcakedom that will grace the taste buds of our guests.

Ming is my ultimate resource right now. Heck, we might not even have to scout around for any more recipes, she has 31 on her site already! Just looking at them makes me drool, badly.

Today we tried the peanut butter cupcake with peanut butter frosting and chocolate ganache. Only we didn’t do the chocolate ganache because we are students and therefore lazy. We just used good old Hershey’s Chocolate Sauce instead.

They were AMAZING. The perfect amount of peanut-butteryness. We used less sugar in the frosting because 2 1/2 cups was much too sweet and it turned out great.

Me: I can feel my heart seizing up eating these things.

Mr E: No! That is your heart saying thank you in Morse code!

Are we going to use them for the wedding? Hmmm… I don’t think so. They are so good that we’re going to keep them for ourselves… mwahahaha (plus they aren’t the easiest cupcakes to make so I can’t see myself make 120 of them).

Oh man ganache is TOTALLY worth it! And the easiest way to do it is…
heat up your cream a little.
Pour it over the chopped chocolate.
Let it sit. Stir. Let it sit more. Stir til smooth.

The hardest part is figuring out proportions. But no matter what, it will be delicious.
