We were bad newlyweds. Very, very bad! Why, you might ask?

We ate the top of our cake… 11 months early.

The tradition is that you save (by freezing) the top of your wedding cake, so that you can have a slice of it together on your 1 year wedding anniversary. When Mr. Dolphin and I got home from our honeymoon, we couldn’t wait to dig into our wedding cake. At our wedding, we barely got to eat any of its deliciousness, so we were eager to finally get our slice of ’tropical carrot cake’ heaven. Plus, we were given advice from our baker to eat the cake now, not later, as the whole freezing process is no bueno for the cake.

We followed the thawing directions given to us by our baker, and then slowly started to unwrap this baby for some sweet dessert after dinner one night. Okay, so maybe we were back from our honeymoon for all of 2 days when we decided it was time to eat our cake. :)

Here I am examining the cake and thinking about how yummy it is. I’m wearing my new shirt from the Paia, Maui store Alice in Hulaland (a super cute shop in hippie town).

Cutting the cake a 2nd time. We already had plates ready to eat up the scrumptiousness we were expecting.

Looks super yummy, right? But was it yummy? Not really. :(

Our consensus: Don’t wait to eat your cake, because after freezing the cake, it will taste nasty whether it was frozen for a year or 1 month. We were pretty depressed at the lack of yumminess.

We vow to order a small cake from the same baker in our beloved ’tropical carrot cake’ on our 1 year anniversary (in 11 months). I placed the icky 1 month old cake back in our fridge, as Mr. Dolphin swore he would ’snack’ on it over the course of the week. He didn’t touch it once. So in the trash it went, along with a tear or two.

That’s a bummer! We actually had a great experience with ours - we ate our topper on our anniversary, and it was actually delicious. Our baker gave us very specific instructions on preserving it. If done correctly, will hold in all the freshness (and we were successful!).

Yours still looks good, though! =)

wow I’m suprised it didn’t hold. Most pastries will be fine in the freezer for a few months. Maybe it was the carrot cake part that just didn’t hold up as well as some kinds of cakes. i think having the baker make another one in a year is a great idea!

I’ve always heard that frozen cake just isn’t the same! We probably won’t freeze ours - we’ll just buy more on our anniversary! :)

We’ve eaten a piece of ours for our one and 2 month anniversary and it was yummy both times!

so disapointing! I heard from some people who got a cake from our baker that theirs was still great a year later. I’ll hold out hope. Although that is a MASSIVE top tier! I wouldnt want that taking up room in my freezer

When my mom married my stepdad ten years ago, we didn’t realize that the reason they sent us home with the top of the cake was so they could freeze it. So instead, we ate it while we opened presents. It was the perfect wedding day dinner.

That is a complete bummer!!! I wonder if the same thing will happen to us as well…BUT I love your idea of ordering a small cake on the 1 year mark!

We actually served ours to family again the next day and didn’t bother to freeze the rest! it sat in our fridge for three weeks while were away and got all dried out as we didn’t package it properly. i’m up for just ordering a cake when our anniversary comes up! :-)

We found out I was prego right after the honeymoon- needless to say the cake didn’t stay in the freezer long :P

We froze ours and eat it about three weeks after the wedding. The top teir was a different flavor that I really wanted to try. So we did. We may order a replica for our anniversary.

We’re waiting. I know it’s silly, but I just really want to do it even if it’s not as tasty. Sometimes I hate tradition and sometimes a sucker. This time, I’m a sucker.

I would cry too if I had to throw what I knew wa good cake away.
If anyone is in Massachusetts, our bakery Cakes 4 Occasions includes a free top cake one year after our wedding so we don’t have to freeze ours. We just go back in after a year and order it which I think is a genius idea.

We are lucky and have a baker who gives a free anniversary cake so now freezing necessary! I actually know someone though who did the freezing but with a twist, they only took a little at their anniversary so that the following anniversaries they could have some more! A big YUCK to that one!
