It’s really only half as crazy as it sounds. To be clear, by “self-catering” I do not mean that Mr. Husky and I will be cooking in our suit & gown, simply that we will have a group of willing chefs to cook & serve.

Our wedding will take place in a very small town, meaning there are no local catering options. There is a big-ish city about 20 minutes away, but it’s not exactly known for its cuisine.

In the beginning, Mr. H and I had discussed the possibility of self-catering. We even laid out a possible menu, loosely based around that of one of our favorite Portland restaurants, but it just seemed so impractical. There would be so much happening that day – did we really want to worry about the food, too?

That all changed during our tasting with a local company. They had claimed to be well-versed in the world of wedding catering, and when we mentioned some of the fare we were hoping to serve, they offered to prepare a tasting for us.

This is where it all goes downhill.

To begin, we pulled up to the address they had provided to—wait for it—a truck stop. Yes, our wedding-meal tasting was spent on vinyl-coated plastic chairs in a truck stop diner.

Our proposed menu was chosen based on the ease of preparation, and a lot of this revolved around various mac & cheeses. Before anyone panics because we’re planning on serving such a “basic” dish, just feast your eyes on this:

It’s really very simple to prepare. I even provided the actual recipe for the particular type we were tasting – a creamy-spicy Cajun style. My mouth watered for the entire two-hour drive, and I leaped out of the car as soon as we arrived, only to be served this:

… with maybe a little bit of cayenne pepper sprinkled in. Certainly not the creamy Cajun goodness I was hoping for. When they handed us their price-per-head estimate of $25, Mr. Husky and I exchanged a glance, and both knew that we would be doing this ourselves. I’ll soon get into more detail about how we’re planning to pull this off.

Wow! Now I totally have The Blues for Kraft, but dang.

As far as us, we’re having our reception at a restuarant and they can’t get better wines (even though they want to think they’re gourmet), so we have to bring our own and they can only get 2 IPA beers because “that’s the only IPAs licensed in the state.” Lie. With less than 4 weeks until the wedding, we’re in total trouble.

We are having yummy BBQ and creamy Mac & Cheese with little crumbles and stuff on top is one of the items on our list for sure. But that Kraft cheese usage…OH WOW. I’m excited to see your menu. :)

We are ’self-catering’ as well!
Im interested to hear how you are going pull it off.
Everyone has a lot of concern about this, but the meal has become a total no-stress in my life, i’m not worried in the least bit!

This is a huge endeavor! Holy Smokes… I love making my own food for parties.. Maybe you can get some Denver Bee’s (or where ever your smalltown location is) to lend a hand

how do you know for sure it was kraft mac n cheese? unfortunately i think the presentation of their location perhaps tainted your opinion in advance… like they say you only get one chance to make a first impression!

@invalid_username: :) I don’t know for sure it was Kraft M&C. Honestly I haven’t had any in probably the last 15 years. It was really more about their failure to listen to what we wanted, and try to charge a steep cost-per-plate for a food item that is easy to make and cheap to purchase. And you’re right about first impressions!

Self catering is sometimes a great option. But make sure you read and practice food safety rules! The last thing you want to have your wedding remembered for is a food borne illness! I help run a wedding venue in Birmingham and we find that some people do not bring gloves, they have less than adequate knowledge about keeping food at the proper temperature etc. There are plenty of sources for this information from the government sites to EzineArticles.
