When I get excited about something (whether it is historical linguistics or the Beatles) I tend to go overboard in research, and planning this wedding is no different. Mr. Earrings is my high school sweetheart, my best friend, and somehow we combine all our quirks into one big happy mess.
About Mrs. Earrings

Have I mentioned we’re making our cake ourselves (as well as the cupcakes)? No? Well, we are. Firstly, because I love baking and I’m confident I can do it (with some Mum and Grandma help), secondly, to save some moolah, and finally because all the cake inspiration photos I saved in the early stages of planning looked homemade-possible (if that makes any sense).

You see? No fondant in sight, frosting that looks good even when you make a mistake, and fresh flowers or fruit or simple DIY embellishment for decoration. I think this could be do-able! Okay, some of the above are a little more ambitious than others, but you get the general idea. Our cake will just be a single tier for cutting (and for Mr E and I to hopefully steal and eat at the hotel later) because we will already have all the cupcakes.

Now we just have to pick a flavour and a recipe and do a few trial runs! We already have a chocolate one that is looking to be a strong contender, but we haven’t made up our minds completely yet.

Those are all really pretty. I like the simple style too. I think the lavender on top could really fit in with your wedding!

I’m doing my own cake as well. Luckily, i have someone who is lending me their Cricut Cake so I’ll have a little help!
One thing I do when using non-fondant frosting (buttercream) is I wait until it is slightly crusted and take a peice of copy paper, smooth in on and gently rub, so long as the icing is slightly crusted you will be left with a beautiful smooth finish.
Another decoration you can use is sugar fruits and flowers (Martha Stewart has directions) very simple, very pretty.

i have been debating on diy cake. since the flavor of cake we want only happens once a year (egg nog) i would have to make it round christmas time and then freeze it. i think if i just make the cake (just the cake cake) and freeze it that should be fine. or even just freeze the cake batter…hmmmmm

chocolate with orange buttercream frosting as the filling is delicious. it’s what we had, and it’s also what i’ve made on my own since our wedding.

Mmm now I’m so hungry. I love cakes that look delicious, as opposed to like a complete work of art (although those can be lovely too!). We’re DIYing as well.

I love the idea of making your own cake. I have also been thinking about doing this to save money. Let us know what flavor you choose and the recipe!!!

cr6zy: I don’t think that you can freeze the batter because it has raw eggs. Just a thought, not sure though. But you could definately freeze the cakes already cooked.

I also love the DIY cake photos!!! :) (That’s the sort of frosting look I’m hoping to go for too @ my wedding…and have a small cake to cute w. my adorable topper and cupcakes for the guests…)

I think I am already taking on too many other DIY projects though to also make the cake. Maybe I’ll try for another wedding event though? like the rehersal dinner or something?

I love the first cake! If it were possible for my to DIY I would, but I am not that talented. I would probably spend the same amount in trying to get it right as just paying someone to do it.

This is going to sound odd, but remember that all cakes are made by a person, some of those people just happen to do nothing but make cakes for a living. A cake with a bit of imperfections is even better than one that is perfect because it shows that love and time went into the cake.

When finishing your cake in buttercream, remember to crumb coat as many times as you want. It is the first coast that is really thin and just holds in the cake crumbs. The better the crumb coat the smoother the final coat will be. Do not freeze the cake between layers of buttercream, it will not help produce a smooth finish, but only freeze the current layer.

I took some Wilton Cake Decorating classes at a local craft store a few years ago, and you would be amazed at the cakes you can make! I’m gonna DIY my cake for sure.

In all my past practice cakes I simply used Duncan Heines Moist Deluxe Cake mixes and everyone always asks what my recipe is. I feel bad telling them it is box mix. I plan on sticking to that for the real thing.

BTW cupcakes are actually much harder to make than cakes. But that could just be me

for box mixes - always sift the dry first, it will give the cake a light-ness that will make it seem like it is from scratch

cupcakes - as long as they all have the same amount of batter, they should all turn out exactly the same and have the same bake time, that is why you always need to use a scooper for them. Scoops now come in many different sizes and can be used for many things in the kitchen (cookies, cupcakes, portion control of sauces, etc)

We’re not DIYing our cake, but it IS being made by a “friendor”! She’s my fiance’s friend who works in catering. And we’re totally having that messy frosting look too — just because we love it. Messy chic! (Also, we’ve tried her cakes and OHMYGODSOGOOD.)

I kind of want to DIY our cake, because I also like baking, and the decoration appeals to me. My fiance gave me a really dubious look when I mentioned it, though… in terms of adding something else to do at the last minute and thinking I’ll stress out too much.

He’s probably right.

But dangit, I want to give it a try!
