DIY Chocolates

The OOT Bags are coming together! We’ve purchased most of the items we need. And, this past weekend, we made all of the DIY chocolates! When we start started, we realized it was time intensive, and I didn’t think it could be done in a weekend. But with tons of help from Starfish Mom, they are all done and packaged to go!

Here’s a glimpse into the process:

We had multiple molds. If you’re doing a ton of these, I recommend having more than one mold. It takes a lot of time for them to cool, so you have to do all the work, then wait, then do it all over again. It’s really messy, so getting more than one set done at a time helps.

We had molds for large shells, sand dollars, starfish, and a mold with mixed smaller shells. The starfish kept breaking when we popped them out, so we decided to skip them. It was too much work and about half broke each time. Delicate molds are harder to do, and the little starfish arms broke off. The other items didn’t have any points sticking off to break, so they all stayed intact.

We added white chocolate to the design, and these ended up being our favorite. We bought brushes to add the detailed work. If you do this, you have to make sure to clean the brush with hot water after each use, otherwise the chocolate hardens and gets grainy.

DIY Chocolates :  wedding diy favors food newport tutorial Cimg68201  At first we tried using Wilton chocolate-making squeeze bottles. It was so messy to transport the chocolate between the bowl to the tube, and it hardened quicker. Starfish Mom decided to just use a pyrex measuring cup and spoon. She also learned timing the chocolate in the microwave is key. She burnt the first batch and decided to start with 30 seconds and move down to 15 second heating periods, while mixing in between.

We also learned that after cleaning the molds, you have to completely dry it. If there is any moisture at all, the top of the chocolates come out funny and they look sort of peeled. At first we couldn’t figure it out, but after trying the second round, it seemed like this could have been the problem.

I had originally done my own trial with Ghirardelli chocolate and they didn’t come out as good. I like the flavor of Ghirardelli, but after heating it, it doesn’t taste as good. This time, we used chocolate designated for candy making and it came out so much better!

After a lot of heating chocolate, pouring chocolate, cooling chocolate and repeating, we were finally able to package them!

I had bought cellophane bags and we tied them with ribbon.

Oh wow! Wedding bee brides are putting me to shame. I couldn’t even come up with this idea if someone paid me :( But your chocolates look yummy. I’m sure your OOT guests would love them and know the amount of time and attention you put towards making them :)

Whoa! I love this DIY, but I feel you on the whole patience thing. Looks like that took you a big chunk of time. They turned out really cute!

I make chocolates all the time, and I use the Wilton squeeze bottles. You can melt the chocolate pieces right in the bottle! I fill the squeeze bottle up with Wilton “chocolate” candy melts, and put it in the microwave on the defrost setting. Check the bottle every 30 seconds or so, and knead the bottle around to mix it! Put on the squeeze tip top after melting, and just squeeze into the molds!

Adorable and delicious. Our best man (who is also a good friend of mine) and I made truffles for a New Year’s Eve party a couple of years ago and had a lot of fun. We used molds shaped like topless ladies, complete with chocolate nipples. They were awesome.

We melted the chocolate in a double boiler on the stove instead of in the microwave, and we didn’t have any trouble.

I make chocolate molds and chocolate candies alot. If you have a Michael’s or AC moore near you there are these mini chocolate bottle dispensers. I can’t remember the name right now. Or if you have those old time mustard of ketcup squeeze bottle dispenser-that would make filling the molds alot faster.

Love them! We included cedar grilling planks in our OOT bags for a little local flavor and we also included pretzel M&M’s cause they rock and well I have a shameless love for my moniker. Dipping pretzels in chocolate for after ceremony snacks was as close to candy making as I got. Love the starfish!
