I knew I was in love from the first moment I read their sample menu. I drooled all over my keyboard, swooned, and carried on until Mr Waffle told me to get up off the floor and stop being so dramatic because it’s just food.

JUST FOOD?! Ahhh! How dare you say it’s JUST FOOD! That is a crime, sir!

After all, I am a food lover! I am one of those folks who plots out where they are going to eat on vacation before they pick out sights to see. I am a little lady with a big appetite for all things savory and delicious. So, when I came across Royal Fig’s menus I knew I had to have them just as much as I knew I had to have Mr Waffle after the first time we met.

They are a husband and wife team who prepare everything with local, in season ingredients. This makes me super excited because all of our guests from out of town will be able to experience the foods Austin has to offer and…in the form of BBQ (yes, the Waffs has requested BBQ, and I am totally down with that)! They also have a complete bar package that is a steal of a deal which includes all the ice, equipment, mixers, bottled water and we get to create 2 signature cocktails. Eek…signature cocktails!

I was a little bit nervous at setting up an appointment with them. It was like asking out one of the cool kids at school and I was so afraid of being rejected (which I know makes no sense whatsoever). However, after a few emails we finally set a date to meet. Would they be as awesome in person as they were online? Would they live up to my expectations?

On the day of the meeting, and with butterflies in my tummy, I changed clothes about 20 times and made my way to their office and kitchen. It’s in a fancy part of town. Will they know I don’t belong there?

I walked into the building and was greeted by amazing smells and Kristin Stacy (co-owner and event director). She was so wide-eyed, warm and energetic. We instantly clicked…eeeeeeeee! Whew! This was going to work out well after all! For the next hour we talked about all the things we had in common, menus, our venue, the wonderful world of weddings and scheduling a tasting. She said she would send a proposal complete with a price breakdown within 24 hours and I left on cloud 9!

Then…24 hours later…I received the proposal. My jaw hit the floor. It was definitely over our budget.

NOOOOOOOO! We wanted…no, I NEEDED to have everything on this proposal. We also needed to shave about $500 off that price or their would be no money left to buy champagne for champagne toast time. I also knew Mr Waffle would not be cool with going over budget on food. He does not have the same relationship with food that I do. He does not understand my need to keep Heirloom Tomato Salad and Watermelon Gazpacho on the menu (that is, if he even knows what and heirloom tomato or gazpacho is). Ugh.

What was I going to do? Where was I going to make the cut? Did any of you ever have a moment like that?

Look at what you can and cant afford maybe you cant afford the watermelon gazpacho you wont die try to keep it as budget friendly as possible
for our dinner we will be having a spring salad mix with greens and berries a amazing berry vinagrette pasta choice of marinera or alfredo roasted flat butterfly chicken topped with a cheese and muchroom topping and of course bread rolls
If you stick to your budget and try not to over react with every detail your FI will give a care and even participate in the wedding planning

@ManciasToBe: To be fair, I don’t over react to every detail of planning. Waffle does care and participate very much actually. I think every couple has their own balance to the way they handle the big issues and this is the way we work.

Wow, you’re lucky you only have to cut $500! When I priced out caterers in San Diego, I though I had a reasonable figure in my head. Not a single caterer came in for less than $3,000 over what we had budgeted (which, mind you, was $3,000 for 75 people, and didn’t include alcohol). OUCH. It’s just so much more - especially if you want “interesting” food!

I had that moment with my dessert menu. It was almost double what I had in mind and I think in the end I’ll cut out a small amount but plan to really have the whole thing. I’m going to cut budget from somewhere else. Champagne toast and aisle decorations were quickly off the budget and into cake and pie. I figure why not, cake and pie make me happy. Champagne makes me sick.

Sigh yes I did have that moment… When you realize that what you simply just have to have for your wedding (or it won’t be a wedding anymore - or at least not a wedding worth having) is out of your budget… What did I do? Well, in a perfect world I would have just shrugged, said it was “my day”, and told my FI that whatever we wanted, we deserved, so we should have it (seems that’s what everyone else is doing)… In my world, I let it go. Now, I’m still feeling excited and happy for my wedding - will see after it if what we couldn’t afford would have actually made a difference!

@crayfish: OUCH indeed! The $500 was actually what I needed to cut after I decided to move some numbers around and add them to catering (oops).

Ah, we had this moment…and realized that we really only wanted to have the best dinner experience {clambake and bbq!}, while the appetizers and salads and stuff didn;t have to be so “top shelf.” we went, line by line, and crossed off a few things on our buffet list and was able to knock down the price :) you’ll get there too, waffle!

We definitely had sticker shock with caterers. We would look at their online menu, email for a personalized quote and it would come back 2-3x what you would think from their website!
We thankfully found a small catering company whose sample plate for us went beyond what we expected. In the end our dinner will be healthy (except for the 3 cakes and whoopie pies ;) ), delicious, and affordable. I’m so looking forward to the blueberry sauce on the chicken- sweet without going overboard.

The catering bill was definitely waaaaaaay over what we expected, but food is so damn important to me too! In the end, we sacrificed other things in favor of food! I wonder what solution you found?

We’re still trying to work with our food budget, depending on the final head count will let us know if we have to cut back on something (I’m hoping not!).

When I travel, I choose locations based on food (or wine). And when I get there? I base my itinerary on where I want to eat.

You’re a waffle after my own heart. ;)

Dear Ms. Waffle, teach me to draw like you please!! Anyhow, $500? I wish. I can’t even tell you the kind of sticker shock I went through. I am planning my wedding in Houston thinking for sure, it will be cheaper than NYC. Yeah it is, but not by much. And the stress of being an OOT bride is just annoying. I’m sure you will get something worked out with your amazing caterer :)

My ever so generous brother offered to pay for whatever catering I wanted. I’m getting a deal I wouldn’t have even dreamed of having without his help. Right now I’m picking out the menu with FI and every now and then he freaks out and wonders how we’re going to pay for it. I keep reminding him: we’re not! And you’re so right, every couple DOES have their own balance on the way they handle things. As they would say in my country: Nobody knows whats in the pot but the person who’s cooking.
