So, when the big, bad blizzard of 2011 hit Chicago this week, I decided that I would try to make these babies myself. Why would I try this while the great city I live in was being devoured by snow? Well, I figured that I have just over 7 months to perfect this recipe before they need to make a debut at our sweet table! I was actually inspired by the ’Bee boards where I saw that lots of other brides had persevered and practiced the recipes over and over until they got them just right. With that inspiration, I bought some almonds and headed toward the kitchen.

I stumbled on a great interpretation of a Martha Stewart recipe and tried my best to follow all the instructions. I even took some extra precautions to make sure that all the little cookies will be the same size, like tracing quarters on the underside of parchment to use as a template.

But I did something I probably shouldn’t have as a newbie to macaron making: I ground my own almond flour to save some money. Without the fancy schmancy food processor that is sitting on my registry, I used a mini processor and my flour came out kinda lumpy with little chunks of almond. But, nonetheless I persevered and tried to continue the recipe. I over mixed a bit, so my batter came out runny instead of fluffy like it should be. Clearly, the template wasn’t much of a guide with my soupy batter, so I ended up with what looked like a Pepto bismol on a cookie sheet.

Again, I figured I’d put this much effort into the process so I let them set for 45 minutes and stuck them in the oven. 10 minutes later, I pulled them out and to my surprise, I made some half decent macarons!! Sure, most of them look more like an amoeba than a baked good, but they tasted good and I know it’ll be better next time!

Even though they were pretty ugly and most of them didn’t match up, I decided to sandwich them up with some raspberry jam we had on hand and they were pretty darn tasty! Not a bad way to spend a snow day, huh?

I think I need to research macaroons. I seriously thought they were only those coconutty cookies until JUST NOW. See, the Bee (and the Bacons) are contributing to my continuing education!

They look good! You definitely got the shiny top/crumbly “foot” thing down, and I think the homemade look rocks. :) I haven’t quite gotten there yet, but I have a few tasty recipes for big, chewy cookies that I might make and bag as favors…

I’m doing my own cupcakes! Just tested out the recipes yesterday for a party we had last night and both of them were big hits! Now I just have to keep from eating all of them :)

I think you did an amazing job for your first shot at it! And you have perfect timing! I was just thinking I want to try to make Macarons for my shower which is going to be Paris themed (we got engaged in Paris). Thanks for sharing the recipe!!

@Miss Tartlet: It was a pretty easy recipe to follow. I’d just recommend buying almond flour instead, since I couldn’t get the almonds ground fine enough to not be lumpy.
@annapeeps: Luckily I had a dinner to go to the next night or I would have gobbled them all myself!

@Miss Cinnamon Bun: Totally understand no-nuts. We’re actually including these as a gluten-free option for guests since we have a few people that won’t be able to enjoy the cake.

Trader Joes has Almond Flour for WAY WAY less than anywhere else - as in 3.99 a pound. Which is cheaper than almonds - I highly recommend! Good luck next time! <3 They can be tricky!

Have you checked out Not So Humble Pie? These babies are like her pet project, and her final recipe is the result of dozens of iterations. Plus there are lots of great visual aids to help you figure out what you’re doing wrong.

I’m hoping to make some ganache-filled square chocolates for my favors. I’ve gone through two iterations so far, and I’m still working on getting the look I want. They keep coming out sort of irregularly shaped!

Props to you for making your own macarons for the big day! How far in advance can you make them?

@kristophine: OMG that site is amazing! I’m definitely going to be using her troubleshooting guide on my next batch!
@Bubu82: Could you use that “As Seen on TV” Perfect brownie tin to make them more uniform? Apparently the macarons can keep frozen for up to 3 months, so I’m going to be spending my summer baking!

They’re such a huge hit in wedding world that I had to try them when we were in Paris on our HM. But I really did not like them. :(
