I’m one of those people who can’t afford or make their own macarons but want the style and yums of a round sandwich cookie. Enter the whoopie pie! Many, many bees before me have successfully made these for their weddings and have inspired me to follow their example. And, Mr. Crepe promised me that when I visited, he’d help me make a batch to see if it was something I wanted to tackle on the actual day.

At first, I wanted to make them from scratch but came across a recipe that used a cake mix. I decided to go with it, and here’s my reasoning…if I can’t make them from a cake mix, I should probably MOVE ON. This homegirl has no business trying to make cookies for a wedding if she can’t make 20 cookies from a mix.

The recipe called for 1 box of cake mix, .75 cup of water, and two eggs. I got a box of carrot cake mix and some whipped cream cheese frosting for this experiment.

I used a half teaspoon to measure out each cookie and that worked out pretty well, until I got lazy and things started looking amoeba-like. Bloop.

But 10 minutes in the oven and..

Not bad, right? They look pretty cute, considering how quickly I blew through the process. (It had been a super long day and I was a zombie.) The recipe essentially made the cake batter more concentrated so the whole thing was much too sweet for my taste. Since the easy part was actually making the batter and the part that took the longest was spooning them out, I’d just go with batter from scratch next time.

So what’s the verdict? The decision to make these for the wedding is still up in the air. The part of me that wants to include handmade touches everywhere is trying to figure out how much earlier these cookies can be made (can the cookies be made the week before and still taste fresh?), but the part of me that doesn’t want ANOTHER project to tackle is just ready to throw her hands up and leave all the foodstuff to someone else.

And you know what gets my goat? (Yes I am bringing that phrase back.) Mister Crepe KNEW. He knew that telling me NOT to do something would have been accepted as a personal challenge—so he told me do a test run. Knowing all along that it would wear me out and make me realize that I had taken on too much. Well, that makes me want to stamp my foot and just MAKE THE STINKIN’ COOKIES. Huff.

Or maybe I should just be grateful that I’ve got a guy who knows how to get around my personality issues.

We make (chocolate) whoopie pies from scratch. They’re pretty easy. I like how light the cookie part is — our recipe is very fluffy and doesn’t feel heavy when you eat them. Which usually means I eat too many!

My favorite is the banana flavor that the Amish woman at the farmer’s market makes. Amazing.

Anyway, you can freeze cookies in general, but I’ve never tried freezing a whoopie pie. Maybe make the cookie part ahead and assemble them closer to the wedding? Then again, I’ve seen lots of adorable whoopie pie places online that do orders for brides.

No matter which route you go, I support edible favors. And please do bring back “gets my goat.” :)

You can freeze the cookie part relatively easily - just make sure they’re completely cool and then put a layer of wax paper between each row.

You really can’t beat boxed cake mixes for what they’re worth. However, canned icing is a whole different story. Have you considered making your own cream cheese icing? It’s super easy and you could even make that a week in advance (store in the fridge in an airtight container.) Your guests would totally not even notice the boxed mix cookies if you used real cream cheese icing. And you could play with the ingredients to cut back on the sugar a bit to even out the overly sweet cookie.

I made some, and we polished them off a couple of days after making them. They still tasted good, but a week is probably pushing it. Unless maybe you freeze the cookie parts and assemble them later. http://www.mynameiseileen.com/2010/11/my-first-time-whoopie-pies.html

@Amaryllis: I thought it was possible to freeze cookies but I’m not exactly sure how and then how to thaw them (total cooking NOOB).

@kcroxyoursox: you’re probably right.. I do need to make the frosting myself if I’m going to do this. When you say freezing the cookie part, do you mean after they are baked?

Ahhh I don’t know anything about baking!!

We’re making whoopies too! Check out my post from a couple weeks ago the book I recommend in it is fab and the receipts are super easy to make we used a baking sheet specifically made for whoopies with shallow indentations and itreally helped with making them uniform also I highly recommend using a piping bag it’s less mess and makes the pies look neater.

Ooh, I have a tip for making box mix taste home made! Just replace water with milk and oil with the same amount of butter. It comes out tasting better and it takes no more effort!

Those look so yummy! Whether or not you decide to DIY just before the wedding (crazy girl) depends on how many guests/pies per guest you’ll need. Too funny about Mr. Crepe. Knowing when to give space or encouragement is a learned skill!

They’re so cute, but I agree, maybe a bit too labor intensive. I really want to make some cookies for our buffet, but I know it would be inane :(.

You can definitely make them two to three weeks ahead of time and freeze them, the filling can be made a week in advance and kept in the fridge, then they would have to be assembled the day before or the day of. The Baked cookbook has an awesome pumpkin whoopie pie recipe, whatever you go with definitely do a homemade filling, marshmallow is traditional. Goodluck!
