The Middle

You might think I’m referring to being the middle child, or being in the middle of family conflicts, or that television show The Middle. Or that Jimmy Eat World song The Middle. Or, the middle finger. But I’m not.

I’m referring to something much, much more important than any of those things. And something much more near and dear to my heart.

I’m referring to…The Middle Brownie!

People have very strong opinions about their brownies. Apparently, a lot of people like their brownies with edges. There are entire specialty cake pans devoted to baking a whole batch of brownies so that each brownie, when cut, has a crispy edge.

I just don’t understand the point of this. I hate those tough, chewy edges. I want my brownie cakey (or fudgy) and completely edgeless. So what if it’s a bit more messy? It’s DELICIOUS. I want someone to make a brownie pan that only bakes middle brownies. No edges. (I realize this might be impossible, but I like to dream big.)

Here’s a story for you. I was a senior in college and baked some brownies in the dorm kitchen, which was all the way down the hall from my room. I pulled the brownies out of the oven, left them to cool, and walked back to my room. Ten minutes later I walked back to get my heavenly brownies, following the delicious scent wafting down the hallway, and what did I find?

The entire middle was missing from my brownies!!! I thought this was a practical joke, and that perhaps my friends had cut the middle out of my brownies, but of course not eaten it because that would be way cruel. But no, apparently some Neanderthal punk ate the entire middle out of my brownies. I guess I can’t blame him too much…I mean, it is the best part.

[Um, Magic? What does this have to do with weddings?]

Oh, sorry, my bad. See, we’re having cake, and s’mores, but we are also having brownies! So I’m looking for the best brownie recipes in the whole entire world! Normally I use a coupon and buy what brownie mix is on sale, and Dr. Bridesmaid swears by the Ghirardelli brownies which are quite delicious.

Trader joes has a mix- truffle brownie mix. Add in half a bag of chocolate chips. And under cook it by 5 min. The easiest and yummiest brownie recipe I have ever tasted in my life.

CLEARLY you will need to do some research with all the tasty brownie recipes coming your way. And maybe invite us? The hive is very, very good at eating scientific experiments!!

Those Ghiradelli brownies are seriously good, and I’m normally a from-scratch only kinda gal. You can even buy huge boxes at Costco. I say, go the easy yet delicious route for the wedding.

I love brownies sooo much that when I decide I shouldn’t eat any more I literally have to throw them in the trash and pour salt (left over dinner) on top of them so I won’t pick them back out of the trash!! I know, I know this is awful. I have a weakness for anything with sugar and flour in it.

Oh, and Alton Brown’s Cocoa Powder brownies are amaze-balls. Cocoa powder is MORE CHOCOLATE than chocolate (cause it’s just the powdered form of the cacao bean… or something really close too that) so baking with cocoa powder means a more intense chocolate taste.

I make these a lot to rave reviews. You can also do them with peanut butter cups and we are about to try with snickers and heath bars. Don’t cook them for as long as the recipe- only 45-50 minutes tops- and it will only make 20 brownies not 24. Also if you use a mix make two boxes- one for the bottom and one for the top- takes a little effort to make sure the candy is completely covered

OMG…MIDDLE BROWNIES ALL THE WAY, MAGIC! And I’m with Dr. BM…the Ghirardelli mix makes for some amaaaazing brownies.

Whether I want a middle brownie or an edge depends on my mood I find.
I’m a baking purist, so I say STEP AWAY FROM THE MIX. And step towards the AWESOME brownie recipie from the Baked cookbook. It’s the same recipe as the one in this post http://smittenkitchen.com/2008/09/the-baked-brownie-spiced-up/ but without the 3 spices (although one day I want to make the spiced version, it sounds so good). Now that I’ve found that recipe, I don’t make any other brownies.

I will only eat middle brownies. And middle cake. I will cut around the edges just so I can get the middle and it drives my family NUTS!

Edge brownies FTW! But I bet you could easily just cut around the edges, sort of like cutting the crust off of bread, and then you’d be left with a ton of middle brownies.

And if you do that, can I please have all of the edges you cut off? I wouldn’t want them to go to waste! :)

I wish I didn’t see this post…I want brownies now!!! I prefer the moistness of the middle brownies, but would never turn down one from the edge of the pan!

first: MIDDLE BROWNIES ALL THE WAY! my sister and i always fight for the middle brownie so we have to cut it in half [we use one of those 9x9 pans so there's really only one middle brownie]. second: the ghirardelli mix is my favorite. i haven’t had much success making chewy and deeply chocolately brownies from scratch so i happily endorse this brand. it’s my go-to mix. thirdly: now i want brownies

I love the edges a whole lot. I think I need to go and bake up one of the box mixes I have. But I guess it will just have to wait till Wednesday when I bake my other stuff for work.

How about using larger trays, and thinly slicing off the outer edge? I love the middle too, but I wouldn’t turn down a bowl of the crusty bits, warmed up and covered in whipped cream…!
