Mr. Cannon has been very excited about the opportunity to brew beer for our wedding. He got into brewing three or four years ago when I bought him a fancy starter kit from Homebrewers Outpost and a few books on the subject for Valentine’s Day. We have brewed together ever since, and I dare say I believe we’ve gotten better at it over the years. I will say Mr. Cannon is way more into brewing than I am, although for some strange reason it always seems like the beers I brew turn out better. Maybe I just add more love or it needs a woman’s touch or something. That’s obviously total crap, but my beers do tend to be the best for whatever reason. (Yes, I’m totally bragging here!)

Most brewing supply stores offer all-grain, partial mash, and malt extract beer kits in addition to a variety of individualized grains, hops, and yeasts so you have the option to design your own beer or follow an already proven design.

Mr. Cannon and are wusses (although he is branching out more) and usually use kits. Malt extract beer kits are kind of the training wheels of the beer making community. They are the easiest and least time consuming to do because the malts have already been extracted. Mr. Cannon has done partial mashes and dreams of doing all-grain now that we finally have a home with enough room to house the necessary equipment. Unfortunately, we haven’t dropped the cash on the all-grain equipment yet since all of our money is currently being thrown into the inferno that we affectionately refer to as The Wedding, so we decided to do a malt extract kit for our wedding brews.

We each decided to brew a different beer. Mr. Cannon picked a Pale Ale kit, and I picked a kit that is near and dear to my heart—the Dark Cherry Stout Extract kit with Specialty Grains from Northern Brewer. I made this same beer when I was pregnant with Cherry Bomb so that it could be a celebration beer when she was born. It was the first alcohol I consumed after the long drought that is pregnancy, and I have a lot of happy memories associated with it. Making it for our wedding will only increase my affection for it, and I imagine I will brew it many more times in the future.

Brewing beer is pretty easy. The biggest, most important thing is to make sure everything is super clean and sanitized because bacteria and germs will ruin your beer. I am terrible at this part and hate it, because it’s boring. It’s just scrubbing and sanitizing. Luckily, Mr. Cannon usually does the sanitation stuff I hate, so I don’t have to worry about it. (Yay, teamwork!) Then you heat up your grains, add your malt, boil your wort with your hops and cool it all down. Once it’s cool enough, you add your water and yeast and let it all ferment for a few weeks. After that, just bottle it, give it time to carbonate and tah-dah! You have yourself a tasty brew.

Honestly, anyone can do it. It takes a bit of an initial investment, but it’s fun and not too complicated. Of course, you’re never quite sure of how it’s going to turn out until you taste it, so if you’re brewing for your wedding you want to give yourself time in case it doesn’t go well. (If your brew gets contaminated it can create some funky tastes or even exploding bottles!) Also, I would recommend doing a few practice batches before you do one for a special event just so you kind of know what you’re doing.

Most major cities have a brewing supply store of some sort. You can find one near you on beermapping.com (where I also search for brewpubs to visit when I’m traveling!). Most brewing supply stores have a knowledgeable staff who absolutely love talking about home brewing and can give you tons of advice. Don’t be afraid to admit you’re a beginner—everyone starts somewhere and most brewers just love beer and are more than happy to help you with any questions you have or issues you might be facing. I still consider myself a novice and enjoy learning new things from experienced brewers.

So hive, are there any super brewers out there who can throw out some better advice? Or is there anyone out there brewing something special for their wedding?

Oh my goodness that beer you are making sounds SO good. I’m a big beer fan and love it when has a fruity element! You & Cherry Bomb are so cute :)

My husband thought about doing this, but he took a break of a few years between regular brewing and our wedding. I can’t wait to hear how yours turn out. Also, I have my special beer waiting for me once Wombat pops out. Strawberry Abita here I come!

This is so cool! Mr. P has brewed beer, but since I prefer wine he made some a few months ago (which I’m still waiting to drink, apparently it needs to ‘rest’ or some crap). I wish we could use it for the wedding, but that doesn’t fly with our venue. I’m going to live vicariously through you on this and I can’t wait to see how it turns out!

Hey Hey!
My husband and I are avid brewers as well and we made a home brew specifically for our wedding. We chose a Continental Pilsner because it’s a lighter beer -great for summer- and more of a crowd pleaser.
We even designed our own labels, beer names, UPC codes and such. hehe. There’s a thread floating around the boards somewhere with the information on it! It was definitely one of the most time consuming but fun projects of the wedding. But it was all worth it because all of our guests truly appreciated it and loved the beer. Some even saved them for a special occasion!
Alternatively we also used the beers as escort cards, 2 for 1!
I assume you already do this but we saved micro brew bottles during our engagement bc we refused to pay for the bottles! Those were a PAIN to clean!
Please do share the Cherry Stout recipe! Sounds yummy. I love putting a little citrus in our summer ales via orange skins!
P.S. Don’t know if you have kids at yours but for kids we made a Loganberry which is regional to where my husband grew up. :)

Mead/Honeywine is a traditional beverage served at Roman weddings and is made in the traditional fermentation method, only using honey. You can even add a little bubble to it.

Wow, this is impressive! Papa Parasol used to brew his own beer all the time when I was growing up–he has since moved on to roasting his own coffee beans. :)

We’re brewing a Cascade IPA for our wedding - it’s sitting in secondary right now but we’re going to pick up some growlers soon. Yay growlers - makes sanitation and bottling go much faster. Someday maybe we’ll have a kegerator, but we don’t have space for that, let alone all-grain.

We use Northern Brewer’s kits a lot, too, even though my fiance has been brewing for a long time and has some recipes he’s devised himself. Though we did find a store near us which has comparably fresh ingredients so it kind of depends if we feel like mail order vs. having things right away.

My advice is don’t forget the priming sugar! We’ve done that once and almost done it a couple other times (last time, we had to pour a couple of bottles back into the carboy because we started bottling without adding any). Flat beer = sad beer.

@Gerbera: also, forgot to add that I am so impressed you guys are doing a pilsner. I guess the other advice for newbies is that darker and hoppier beers are a lot easier for beginners. When you’re brewing something clean and light, it’s a lot more nuanced and mistakes will be easier to detect.

Ha, my other half wants to brew his own beer for ours too. He just got a book and is looking into it.

I’m not so sure having alcohol floating about the house everyday is a good thing but I will show him your post xD.

so fun, Cannon! I definitely think it adds a special touch, especially since I’m assuming your friends/family know that you guys like to brew.

FI’s brothers are brewing a couple different kinds of beers for our wedding and I am so excited! They brewed for our engagement party as well and it was a total hit!

Thank you! My tip is to filter, filter, filter! Our first batch we followed the directions to a T and the beer came out murky. The second time around we added a cheese cloth when we were filtering during bottling, took FOREVER but worth it. Then when we transferred buckets we added cheese cloth during filtering again. Worked like a charm.

Another tip!
Make extras!!! Sudden combustion may occur! We lost about a dozen bottles due to sudden combustion. Make cardboard dividers (think 12pack) if you are transporting. A paper box works great because of it’s sturdy and is the exact right height for the amber microbrew bottles.
If you are told a bucket makes 48 beers, subtract about 2or 3 because of the murk at the bottom you won’t be able to bottle.

@CurlyRN: Homebrewers Outpost sells giant containers of honey to make mead! I’ve never done it, but I would like to some time.

@Entangled: I’m considering getting Mr. Cannon kegging supplies for a wedding present. I have a couple other ideas in mind, so I’m not sure yet. We’ve never used growlers, but I have some friends who swear by them. We just re-use old bottles like Gerbera because we’re cheap. :)

@organicgal: That’s awesome that you’re getting homebrews for your wedding! I love trying other people’s stuff, so I think it’s awesome that a lot more people are brewing these days. People always seem to enjoy it, so I’m not surprised it was such a hit at your engagement party!

My fiance is an avid homebrewer and uses the all grain approach to concocting his delicious beers. We also have gotten into wine and mead making. Our wedding will have at least two of the homebrews-one wheat for me and have a mead toast.

It has been exciting for my fiance to add his special touch for our big day. So glad to see others share our enthusiasm
