Cake: A Collaborative Effort

There were things I was really worried about with this wedding, and things I really didn’t care about. Cake was on the “don’t care” list.

I like cake, but it just seems like it’s not really a big deal when I think of all the other important things we need to do for the wedding. I also know that Mr. Cannon is not much of a cake fan, so groom’s cake wasn’t really in my mind, either. At one point, Mr. Cannon told me his mother had made a few wedding cakes in her day, and not long after that, she volunteered her services. The opportunity for a free cake sounded exciting, especially since I had rainbow cake on my brain to fit in with the rainbow colors. It didn’t seem like something that required a professional baker, especially since I was much more concerned with the appearance of the inside of the cake as opposed to the outside.

I was pleased with her first run. She was the first to say it wasn’t perfect and said she was going to make some adjustments, but it tasted good and looked good, so I have no complaints. Well, I kind of want it in rainbow order (ROYGBV, yo! Forget indigo!), but other than that, I’m super excited! I have total faith in FMIL Cannon’s baking skills, and I’m glad it worked out. I know it’s going to be awesome on the big day.

Of course, one small cake is not going to satisfy all our guests, so we are doing a whole dessert table. The plan is to have pie for Official Team Pie member Mr. Cannon, a Texas sheet cake since they are a traditional part of any family gathering in my family, some cookies, some Rice Krispies treats, cupcakes, and maybe an ice cream cake. I am also thinking about doing homemade caramels. My mom does them every year for Christmas and I love them, so if I can talk her into making them with me next month, they’ll make an appearance as well.

The baking is being split between my mom, Mr. Cannon’s mom, and myself. I think it will make our “family barbecue” wedding feel even more family oriented with all of the homemade desserts.

Is anyone out there having a family member make their cake? How are your test runs going?

I’ll be attempting my own cake–I’m a pretty decent hobby baker, so I have faith.

In the meantime, I need to experiment with a couple of things:

1. Using a baking core to heat large cakes evenly.

2. Making frosting that looks and tastes good BUT can survive a two-hour car trip. (And that is not Crisco-based.)

3. Learning to properly level layers and stack tiers.

If I can nail those things (and I have plenty of time to practice), I think I’ll make a pretty great cake.

I love that rainbow cake, it looks awesome!
I actually made my sister’s wedding cake last year, and she’ll be making mine. It was shockingly a LOT easier than I thought, although it took basically an entire day to bake, and then another 1-2 hours to assemble, frost and decorate. We got square Wilton pans, which were awesome and came with very good instructions about how many cups of batter were required for each pan, and used a friend’s convection oven. The layers came out of the oven pretty level, but I then had my BIL cut light plywood “bases” at the size of each of the levels that would be stacked, and completely wrapped each “base” in wax paper. We then stuck in a platform of dowels, each about 2-3 inches apart, in a square formation, iced the bottom layer, stacked on the base, then the cake layers, iced those, and repeated. We decorated it with tons of fresh roses, and everyone thought it was professionally done!

The colors look great! I agree, I’m kind of OCD and the color order were bothering me ;) Mr. D’s mom is making our top tier, and we are trying out all kinds of recipes. I can’t wait! mmmmmmmmmm

I love your rainbow cake. At times I find it difficult to imagine your rainbow theme in my head (I’m a very visual person, without tons of pictures my brain gets confused) but this cake… you are selling me on rainbows Miss Canon. Your first test turned out great, can’t wait to see how the end result turns out!

Yay rainbow cake! I actually made one of those, except I used the Martha Stewart 14-layer cake concept, so my layers were a lot thinner. One thing I will say helped is to measure the batter into equal quantities before coloring, and then use baking strips (little silver cloth-like strips you soak in water and wrap around the pan) to ensure evenness.

Love the rainbow cake idea. We had a small cake for our wedding too. A cute cake topper and a lovely cake stand will make your rainbow cake stand out even more.
