If you’ve read the title of this post, you might have a hint of an idea what this is about.

I’m from the South, and it’s not a true Southern wedding, in my opinion, without a groom’s cake. BM C. Bear had a cannoli cake since that was her groom’s favorite dessert. BM L. Bug had a cake with a postal theme as a nod to her postman hubby. My own father had a small chocolate cake for himself. And so I got down to business.

My FI is a drummer, so I first looked into cakes that looked like drums.

But I couldn’t fall in love with any of them. So I moved on. I thought I would make him his favorite dessert, key lime pie. Yummy! I’ve made a few of these in the past two years, and they never fail to make him a very happy man. For the record, Nellie and Joe’s is the ONLY juice to use if you can’t find real key limes.

But then we decided to nix the cake idea altogether. Instead, we’re going to have a super-secret dessert alternative that I will reveal in a later post. But of course, the matriarchs of the family started speaking up. Why, it just isn’t a wedding without cake!!! And so I’ve conceded. We’re having two small cakes. Mine was easy to decide. Red velvet, white buttercream icing. Done. Just big enough for us to cut for pictures. But then I was back to square one with the groom’s cake. And it hit me. What better way to pay homage to our Southern roots than to have ourselves our very own bleeding red velvet armadillo? I certainly can’t think of one.

So we’ll have cake. A very small amount of cake. Mostly for pictures. And hopefully a few laughs. Can you guess what else we’ll have for dessert?

I love that stupid armadillo cake. We talked about having one for our wedding, but ran out of time.

Also, thank you for the PSA on Nellie and Joes. My mom is from Key Largo, so we are key lime pie purists. Lime pie is not key lime pie people!

I was excited about the Steel magnolias reference but am I understanding correctly your having the armadillo cake?! I’m so crashing (but just for the cake part) :)

I think that is awesome. I would stand in line at the DMV if they offered free cake, FI, on the other hand, hates cake so our dessert has been a series of concessions on my end. I would love to have a teeny armadillo cake…all the woman would understand and he can have the apple crisp he is wanting.

Every time I think of groom’s cake, I think of the armadillo ass from Steel Magnolias. Haha. And Nellie and Joe’s is the best.

We had a Bananas Foster chef station in place of our grooms cake. My DH picked it since he is from New Orleans :)
