The Mister and I are pretty avid cyclists---we have nine bikes in our home right now...and one motorcycle! We both enjoy eating food we can't pronounce (language doesn't really matter) and going places we've never been. Shower Cake

OK, so…I have not had a bridal shower yet, and I am not planning one for anyone (at this time)… However, I made this cake this weekend and thought is was SO girly and delicious that I had to share it with you, and, since this is a wedding blog, I figured I had to make it wedding-ish somehow so…TADA! Shower cake*.

Super easy-peasy just this side of totally box cake.

Step one: buy and bake a box of Funfetti cake according to directions on the box for the two nine inch round pans.

I guess you can use some other white or yellow cake mix, but really, why would you? Also I should note, I really like to use butter instead of spray non-stick…it just works better.

Next, let the cake cool… really… I know it may feel only a little warm…. and you’re sure it will be fine. But it won’t. Please, please let it cool all the way.

Next take the cakes out and put one top side down on a plate. (this ensures that the side you put against the other cake will be the perfectly flat side that was on the bottom of the pan)

Then, spread two snack cups of lemon pudding on top of cake one. Yes, it has to be the cups… the pudding mix is just not as lemony and that won’t do.

Stack cake two one top of the pudding and cake one (this cake should be right side up so the flat sides are together)

Now for the fun part! Make whipped cream!

1) Pour 1/2 pint of heavy cream into a chilled bowl (not a plastic bowl)

2) Beat with electric mixer until frothy

3) Add two big spoonfuls of powdered sugar

4) Continue to beat at medium to high speed until stiff peaks form (aka until it looks/feels like whipped cream)

Lastly, frost the cake with your freshly made magic, I mean, whipped cream. If you are feeling really fancy, put some of the whipped cream in a Ziploc bag (with food dye?!), snip a corner of the bag off and pipe it onto the cake in a decorative manner. And TADA!!

So fresh, light and easy! If you are really fancy you can use one of those frosting bags instead of a Ziploc. Clearly I am not that fancy.

*Shower cake can be used for bridal showers, baby showers, any day that you happen to take a shower, or any other occasion when your life would be brightened by cake.

haha, I really love your “*Shower cake can be used for bridal showers, baby showers, any day that you happen to take a shower, or any other occasion when your life would be brightened by cake.” comment. I can’t handle skipping a day without showering, so I think I should eat a lot of cake. :)

Oh my gosh that sounds good. So good I would be having it for breakfast right now if I could!

If you get the chance try a lazy Funfetti cake. All you do is combine the mix with a can of Sprite and bake.

I actually just made this cake for my son’s birthday. YES LET IT COOL ALL THE WAY. I didn’t and when I took it out of the pan, it fell apart. Therefore, it looked crooked.

Do I love funfetti?! This isn’t even a question. I ordered a mini funfetti cupcake charm for my bouquet off etsy in memory of FI’s grandpa! I ALWAYS made him funfetti cupcakes, so his nickname for me was “cupcake”. You are way for talented than me on the cake front though!

You know, I’ve never understood the funfetti love–technicolor speckles inside the cake just never did it for me.

That said, back when I used to teach cake decorating we’d use the pudding cups and filling all the time. A little tip: to prevent the pudding from oozing out the sides (and help the stacked cakes be a smidgen more level) pipe a ring of icing on top of the bottom layer, just inside the natural edge, to act as a dam and cushion. Works great!

Funfetti cake is the best. It is the one cake that I cannot make from scratch, nothing can replace the little magic yet wax-like color drops. I have tried all sprinkles out there and nothing is the same.

Last week it was on sale at Safeway (but not the Funfetti frosting - what evil people) and I stocked up. Sad I know.
