The Mister and I are pretty avid cyclists---we have nine bikes in our home right now...and one motorcycle! We both enjoy eating food we can't pronounce (language doesn't really matter) and going places we've never been. We currently reside in rural Wisconsin, enjoying the cheese and beer it has to offer, and getting outside whenever we can!

I just got an email of the menu from our contact at Arcadia. All I can say is YUM-O. I don’t know how I…rather, Mr. Aardvark and I are going to pick and choose from this list! Seriously!

We are having a buffet style dinner and are picking food off of the regular menu (the menu they have while they are a restaurant and not my wedding reception venue).

One of the appetizers is called the “Garden and Goat Quesadilla” and it’s described as having pesto, mushroom, and fresh salsa.

Umm, hello? That sounds amazing! Also I love the name so that will probs have to be on our “For Sure” list. Not into goat cheese? They have AMAZING pepperoni rolls that I could eat all.day.long.

Their pulled pork and brisket are also STUPENDOUS! I am not really sure how I will choose one type of BBQ…maybe I will have to flip a coin.

But best of all are their pizzas! So good, and so many choices… Now, I know you are thinking what I am thinking right now…Aardvark, pizza? At a wedding??? Surely this will happen:

And surely it would, BUT, I have thought of this and asked our fantastic chef to make the pizzas into fun little calzone-y type things! So, no mess less mess!

Now, let me tell you a little about the pizza they offer like the Tuscan, which contains Arcadia’s pizza sauce, roma tomatos, caramelized bacon, and smoked chicken. (Yes, you read that right…caramelized.bacon.)

Or the Margherita, which contains olive oil, roma tomatoes, and basil.

Or Mama Aardvark’s favorite, Green Goodness, which has pesto, zucchini, green peppers, fresh spinach, artichoke hearts, and green olives.

And these are just a few! Clearly Mr. Aardvark and I have our work cut out for us!

As exciting as all of this is, one thing I am SUPER-DUPER excited for is our midnight (10:00 PM) snack. A baked (or mashed, still undecided) POTATO BAR!! This is where I need your help, foodie bees (and any potato loving bees): what is the best thing you have ever had on a potato?

  • roasted garlic
  • sun-dried tomato
  • red onion
  • fresh spinach

My favorite way to make potatoes is with cheese, red onion, salsa and sour cream. OMG its sooo good!

I am gonna guess you like mozzarella (listed 3 times) and goat cheese (listed twice) HA! I am on board!

There are tons of options. Also I suggest mashed. Think of what it takes to “fix” a baked potato. Cut it, squish it open, add toppings mix aound. Then you gotta make sure you get the potato that is stuck to the skin…etc. Mashed potatoes = top, mix, enjoy!
Sounds wonderful either way though!!!

There is no bacon on that potato list. That is a problem.

Also, we went to New Holland Brewing Co. a few weeks ago and they had pepperoni pinwheels that were amazing! I’ve never been to Arcadia, but if their pepperoni rolls are that good, I bet you could serve only those and nothing else and everyone would be happy.

I would go with mashed potatoes. Oh wait! I am going with mashed potaotes :) me and my sweetie are having one of those at our wedding too

SCALLIONS!

It’s not a potato bar without thinly sliced green onions–they add the perfect touch of color, a bit of cool crunch, and a zippy flavor to the creamy & savory ingredients that are traditionally slathered potatoes…

If you’ve got a sweet potato option, candied pecans are a MUST!

I do love a good potato bar…

YUM! We are doing a mashed potato bar at our buffet (hopefully). So I would say mashed potatoes. I think it is easier to get the portion you want, instead of getting a whole baked potato. I also love all the butter and other yummy stuff that goes into mashed potatoes.

I really like corn and green onions in my potatoes. It might be nice to have pepper mills out too. I LOVE black pepper. My FI always puts red pepper flakes in his.

Caramelized onions!!! They are so yummy and won’t give you funky onion breath.
And I agree with the bacon. I used to teach cooking classes and we did events with 3 different type of bacon for a potato bar, like peppercorn crusted, apple wood smoked and jalapeno bacon. People went nuts for it!
And a lot of people love bleu cheese (despite the funky breath issues) =)

Yum!!! Agreed with Cannon, bacon is a must on that list. And cheddar cheese. And chives. I know that’s boring and all but uhmahgod now I want a backed potato covered in bacon, cheese, and chives. Mmmm.

I am TOTALLY on board the bacon-on-your potato boat! there is some funny formatting going on and my bit about caramlized bacon on pizza seems to have gone missing! So, no fear bees, Aardvark loves her some bacon, and my guest will be sure to have some!

love chili on a baked potato, I think chives/bacon/cheddar/sour cream are essentials… :) Had chicken cutlet on a jacket potato in London all the time when I lived there - it was DELICIOUS.

@Mrs. Cannon: Exactly what I was thinking–there must be bacon!

Green onions and/or chives make a nice, bright topping option (both in color and flavor). And we tend to use Greek yogurt on our potatoes instead of sour cream.
