Although we've hit some unplanned snags along the way, we're determined to have a rocking party this spring with our loud, fun families and friends.

It’s hard to believe that a month has passed since we said “I do.”

Although June 12th wasn’t going to be nearly as much fun as May 12th, we decided to celebrate our month-iversary anyhow.

Unfortunately, a hectic day at work and bad traffic meant a home-cooked meal was out of the question.

We were most excited about enjoying a slice of our delicious red velvet wedding cake, though.

I know most couples enjoy their wedding cake after 12 months, but we tried something different! It was suggested that we should slice our cake and enjoy some each month for our first year of marriage. Made sense…I mean, who wouldn’t want to eat cake once a month?

So, after dinner, we giddily removed our cake slice from the freezer and got ready to dig in.

Yeah…this piece broke a little

It was terrible.

We didn’t even get in a full bite between the two of us…in fact, we worried the cream cheese might have gone bad. [insert sad face]

Not ones to be deterred, we headed to the supermarket for a substitute treat!

Not quite the same…but we’ll take it.

With the remainder of our cake in the trash, it’ll be Ben & Jerry’s again next month…or maybe a fresh red velvet cupcake.

Happy month! Our cake is still in my Mom’s freezer. I wanted to eat it the next day but was shot down! At least you didn’t wait a year. Think of how bad it would have gotten by then!

We froze our cake and waited for our one year anniversary to have a piece. Ours was not good either! I’m not sure if we didn’t store it correctly, but we threw the rest out.

Happy one month! So sad that your cake went bad :( We ate our top tier on our one month anniversary too, and I was surprised it still tasted good after 12+ hours in the car to DC from Illinois. Maybe you can get creative with cake alternatives every month instead.

Sounds like you had a good night just the same… celebrating “anniversaries” can be a lot of fun.

And a good reason to drag out the Toasting Flutes etc.

As for the Wedding Cake fiasco… quite honestly I’m not that surprised to hear that it turned out the way it did… this is why “traditionally” in the past Wedding Cakes were made as fruitcakes then decorated with Royal Icing.

Fruitcakes are well… virtually indestructible !!

Which is where all these Wedding Cake Traditions come from… W-Cake for Anniversaries, W-Cake for Children’s Christenings, Single Ladies putting W-Cake under their pillows to dream of their future husbands, etc.

My first wedding (30+ Years ago), my Ex & I went the traditional route and successfully had Wedding Cake for several years down the road… including the “topper” that we enjoyed at the Christening of our first child.

This time round…

I’ll be going the more “modern route”… and just having a regular cake. Knowing that such cake doesn’t keep well, I’m already planning for several cakes to cover all our Elopement / Destination Wedding Events (Cupcakes for two on the Day – BIG Cake with “theme” decorations for the Back-Home Reception… and different cupcakes / cakes for our Anniversaries etc)

We kept the top layer of my brother’s cake in the freezer for him and his now-ex wife, and I ate it myself when she left him. That was only about 8 months after the wedding, but it was still as good as it was at the wedding. It was a pound cake, though, if that makes a difference.

We did have leftover cake (yay) even though we didn’t choose to save the top tier. We left some with my parents and brought the rest home. A slice of wedding cake each night for a week and a half is a good way to start married life!

1) You were a beautiful bride!

2) That sucks that the cake wasn’t good after only a month! We froze ours for our honeymoon and ate all of it when we got back. I guess it didn’t have time to go bad.

3) Ben and Jerry’s is an acceptable substitute. :)

Oh that’s too bad about the cake!! The idea of trying it every month was a great one. Is your baker local? I’ve heard of couples having a small cake made on their one year anniversary in the same flavor as their wedding cake.

haha Love the substitute ice cream! Yum! Honestly, I don’t think we’ll even attempt to save our cake. It’s a cute tradition, but almost everyone says it tastes awful.

I LOVE CAKE! So, I made sure to cut up our top tier, and put it in airtight pyrex in the freezer. Kept for months, and was delicious every time we ate it! A few months later the cake was a tad dry, but the taste was still lovely.

We plan on ordering another cake from our baker for our anniversary. Why wait a whole year with old cake? But the key to keeping any cake: AIRTIGHT CONTAINERS! The 16 piece pyrex set we got as a wedding present has been an unexpected favorite!

Sorry to hear about your cake, but that Red Velvet ice cream is not a bad substitute. Luckily, we won’t have to worry about our cake going bad; our baker includes a fresh cake on your first anniversary :)

Aww, what a cute first month dinner! Makes me wish we coulda taken some cake home with us. :)

We really wanted to celebrate our first month married after the civil union but Mr. FC was working abroad and instead of letting him come home on time, they made him turn around at the dang airport. So we spent it on Skype. :( And after the real wedding, the first month totally slipped our minds. :P Oops!

I wasn’t familiar with the “preserving the cake” tradition until I found weddingbee, and I must say I still can’t understand it, maybe cause I live in a very hot weather and food goes bad in a heart beat.

I can’t wait to see your recaps, because from those pictures your wedding looked gorgeous! We’re planning on having cheesecake for our wedding, so I don’t think that will freeze very well. I’ve never been that excited to eat de-frosted cake, anyway, lol.
