I love to bake, so it was no surprise that the wedding cake was kind of a big deal for me. We went with our favorite local bakery that Sister Starfish used for her wedding and our family has been going to for special occasions over the years. Even though the bakery is known for their intricate designs, we went with a simple design and let the flavors be the star.
The simple dots fit with our classic, yet laid-back affair.
Narrowing down flavors was hard, but we ended up going with three that were big hits. To represent the fall, we had a pumpkin spice cake with maple filling. One of our guests described it as “tasting like fall.” We also chose vanilla cake with a strawberry Grand Marnier filling, which is always a crowd pleaser with my family.
Last, we chose my personal favorite, vanilla cake with banana cream filling. It is amazing! We chose banana for the top and bottom flavors so we could cut into them on our wedding day. It ended up being the only bite we ate at the wedding, so this was a good idea!
We cut the cake using the knife from MIL & FIL Starfish’s wedding while listening to James Taylor’s How Sweet it is.
The cake cutting was a sweet moment, but the best thing about it was all of the leftovers! We got to enjoy the top layer of cake on our honeymoon!
It was delicious and a fun way to celebrate all week. Seeing as we already ate our top layer, we obviously won’t be freezing it for our anniversary, which is no big deal since our baker is local and we plan to buy a mini cake to celebrate each year!
Did you freeze the top layer of your cake for your anniversary? How did it taste?
